Do You Have A Simple Marinate Recipe For Beef and Chicken

I have never made or used Marinate. But, would love to give it a try. I do not have a lot of ingredients in the house to use. But I do have vinegar and some cherry wine. I have seen marinates with brown sugar, mustard, etc. It seems as we are getting older that we could use some help in tenderizing our beef (steaks, roasts, etc.) they get a bit tough on the teeth. Do you have a marinate recipe you can share, sure would appreciate it. How long do you leave your meat marinate for?

my son got a recipe from a mexican guy he knows. depending apon how much meat you are doing, you take about a cup of orange juice and add one teaspoon of fahita mix to each cup. put in container with meat for at least 6 hrs. better longer he says but its delicious. believe me!

Sounds good, where do you find fahita mix? I like the idea of using orange juice.

Hi , for chicken I use a simple way I just put smatched garlics and inside the chicken , salt, pepper, some honey, a little bit of apple s vinager or any other vinegar and leave it all night long. For beef: I do almost the same , I just add intead of the vinegar some sweet orange with some vinegar, and add some pineapple in pieces. (the pineapple is going to soft the beef meat) . leave it all night long. Then u can cook it or bake it the way u want to. Good luck.

Thank you Safety69, that sounds delicious. I am not into the garlic as much, but all of the other ingredients sound great. I will make sure I pick up some pineapple. Would just pineapple juice work too. Thank you for your help.

Ok , use a little bit of garlic or u know what you just can smach it and then when you are going to cook you take them out. Ok , is better if you use the pineaple , they have in small cans you can put the juice too but, the one that comes with the pineapple, it will help to tender the meat.

Good Morning, MaryLynn! My understanding there are two key reasons for marinades, one to impart flavour..and two, to tenderize! Imparting flavour, the world is your oyster, anything you mix up and tastes good! But when it comes to tenderizing, citrus and or spirits both contain acids which break down the fibres! One of the greatest tenderizers is Papaya (papain) and it is one of the key ingredients in Meat Tenderizers that you can buy already prepared! I try to avoid MSG, and often it is included in the commercial meat tenderizers...but if Papaya is NOT prohibitively expensive in your area..puree it and use in your concoction!

I see your comment, above, about Ham! My son's birthday is Dec. 29...so we had Turkey, Roast Beef..and Baked Ham! (We celebrate Christmas, His Birthday and New Year's) on Dec. 29! This year, I soaked Dried apricots in Brandy 'til re-constituted, added some raisins and curry, thickened...spread all over the Ham, after I had BBQ'd it...and then covered it "en croute" with a nice Puff Pastry..and baked! Really, the best, moist Ham we have ever had!

With soooooo much cooking going on...this year I used Tenderflake, but seldom do I buy a pre-made "puff pastry"--usually make my own, as I am never sure how the pre-made's will come out! So, I bit the bullet..and it met expectations! I am so thankful, I thought of the BBQ as an alternate oven, it really saved the day...just kept it on low to keep the Roast, Turkey, Yorkshires, etc., warm whilst the Ham (in crust) baked! Like you, for many years I did pineapple and brown sugar...but really wanted to step outside my comfort zone...so found that offering in an old "Gourmet" magazine..and then had to make sure, on my one shopping trip to town, to get the extra ingredients!

sounds absolutely wonderful. I like to use brown sugar and pineapple on the ham. Then like I said I like to put the ham slices in 7-Up, sprite or mountain dew to keep it from drying out. What kind of puff pastry did you use?

The only time I have marinated meat was when someone gave me deer meat....And I am not fond of it. I bought a package of seasoning and mixed it with other ingredience but right now I can't remember what...It totally changed the taste of the meat and the kids even liked it!

Wild meat can definitely have its on taste. We just had a venison roast. I did not care for the smell while it was cooking. But, it tasted great, in fact it tasted just like beef roast. Thank you for your info.

I normally use garlic, lime/lemon juice sometimes I add a bit of zest as well and then I'll add a bit soy sauce and a little bit of brown sugar, but if I use sweet soy sauce I don't add sugar and then salt and pepper! I normally marinate beef/chicken for few hours.

Hello MaryLynn321, I use simple ingredients like Italian Dressing, Mustard, Lemon Juice just to name a few. It's really not a big deal like some people make it out to be, or at least I don't think so. But try some of the ingredients that you already have. You will be surprised.

Hi Maisha, does your marinate help tenderize the meat as well. Also how long do you marinate your meat for. Thank you for your advice and ingredients you use. I will give them a try.

Thank you for letting me know. Some say a few hours, but I would think the longer it is marinated, the better the flavor and it would be more tender. I will definitely pic up the ingredients the next time I shop.

Depending on what you want to do I use mushroom soup mixed with a can of water to my pork roasts. Beef roasts I add a package of Au Jus with 2 cups of water mixed in, Then to get away from the humdrum of just eating a burger I get the package of onion soup and mix in well with the hamburger. When I make Tilapia fish they get marinated in honey, lemon, and butter melted in saucepan and pour over the fish, or brush on place fish in broiler for 2 minutes bring out and turn and marinate place back in broiler 2 min marinate again as turning and back in oven for 2 minutes and you have dinner. If you like fish try this tilapia. Its become my favorite white type fish with a wonderful flavor most walmarts carry it in the freezer individually wrapped either in a bag or box for more fish at lesser price. WE just had fried catfish night before last i had gotten from Walmart. Since they removed their fresh fish area Which I really miss.

Thank you Marie. I use cream of celery with beef roast plus minced dried onions. It gives it a great flavor. We like to cut the beef roast up when done, or shred it and then add the cream of celery and let simmer for a few hours and serve on buns. We don't eat much fish as it is quite expensive here. Once in awhile we get some fish from the pantry which is a nice treat. I will have to check out the prices at our Walmart and at Aldi's. I like the idea of honey and lemon for a marinate that would probably work good for tenderizing meat as well. Have a great day.

marinate helps flavor your beef, chicken, seafood, pork, wild meats, etc., It also helps tenderize meat too.
