What is a vegetable marrow? Have seen it in recipes, but have no idea what it is?

Vegetable marrow is also called marrow squash. It is a green oval squash that is about the size of a watermelon. Vegetable marrow is related to Zucchini. So if you can't find that particular melon which was originally cultivated in England than substitute it with Zucchini. Happy cooking!

A vegetable marrow is a kind of squash. It is usually sausage shaped and striped yellow and green. It is actually the mature version of the courgette or zuccini. It is called 'vegetable marrow' because the texture of the flesh when cooked is supposed to be something like bone marrow (the soft substance found in the centre of the leg bones of animals). It is actually something like the texture of pumpkin but does not have the same flavour (in fact, it has very little flavour of its own).
