The past few days for lunch I've been making a quesadilla, but I really consider it a taco. I use cheese and onion and I make it like a quesadilla but since I add onion and fry it a little longer then I would a quesadilla, plus stuff it more, I call it a taco.
It's really good, a white onion and some cheese, and shells. It helps use up the shells I've had in the fridge, and the cheese and onion. I have Salsa Verde that I add to it, very little of that though.
So this is my Mexican Food Kick of the moment, anyone else have a mexican food kick lately? What have you been making?

Wow its great.I use to make a quesadilla with refried beans.I will heat few drops of oil in a pan,add onion and fry till it turns brown,then fry 1 tomato(Chopped small pieces),then add the can of refried beans.For spicy i use to add Jallapenos.Mix well n add in a Quesadilla maker.I always love it.

I think I am going to have to try that myself, as it sounds delicious. I've thought of making my own refried beans but I know that it takes about a day to really make as there's so much process to it.

Sounds really yummy! I am always on Mexican kick for food all the time I love real Mexican food1 I love it when my husband cooks, he he h which is not very often but when he does I tell him I love him more! he he he L.O.L. But he taught me how to make some really good Mexican food and his sister too.

The mexican food that I know how to prepare was taught to me from friends, or adapted online. Some of it was a bit of both. I love making a Tortilla Soup in the winter. I think Mexican Food is just one of those Soul foods we all can appreciate.

The verde sauce I get is a big bottle, can't remember the brand but it's nice and spicy.

I love Mexican food even though Randy does not. With it being hot I have been either BBQ or make salads so I do not have to cook. The tacos you are making sound delicious. Yesterday I made fruit kabobs and they were a big hit.

Mmm fruit kabobs sound great! Especially in hot weather! I've been wanting to make more smoothies and the such with the weather the way it is here lately.

I guess you could say I am always on a Mexican food kick because it seems like I make home made tacos once or twice a week. I actually do not enjoy them that much yet I make them anyway. Just get out a pound of hamburger meat, cook it and then put some taco seasoning on it and that is about it. I could do more with Mexican food but it's so easy just to make those quick tacos so I just do that. I need to branch out some time!

I make my taco's just like that, they are delicious and you can always jazz it up with different toppings. I want to branch into tuna taco's.

oooo ur making me hungry hahahaha! i made something like that almost all the time with tortillas!i have yet to invite our neighbor over for dinner or supper...shes always busy since she is new to TX.

Not at all, it's delicious and quick! I tend to eat lunch and no breakfast, so I'm hungry by the time I cook for lunch.

I always like Mexican food but I'm not used in making it. When I'm still on the city we always eat at Mexican resto and I like their taco and quesadilla too. I hope I can make it someday since I missed it already. We don't have Mexican resto here in my town.

Nope, but Ive been wanting tacos as well. I havent had them is ages, and I think I may made some. My SIL has a quesadilla maker, and she makes delicious ones. She adds meat, onion, cheese, peppers, and some other spices, etc. I may buy some taco kits and go the easy way this weekend while pet sitting.
