Dry bean salad anyone?

I know many of us eat dry beans in Winter as you can turn it into a warm hearthy dish. Chile con carne and other dry bean dishes keep our soul warm in the coolest months.
But this birthday I was thinking of salads as I only served cold cuts. I did not want to work while the party was on.
So I boiled dry beans and made what we call a "chimichurri". It´s finelly diced onions, diced tomatoes, fresh cilantro leaves (chopped), a clove of garlic (crushed) and salt, pepper, a bit of water, a bit of vinegar and chile paste (if you like it). It tastes awesome and if you make additional chimichurri for the thinly sliced red meat, it´s absolutly the best. YUMMY!!!

Oh, my. It would take so long for me to write it. (I broke my left wrist in a fall yesterday and it's not set yet. Got to go to doctor's office today and get it fixed so I'm pecking on keyboard. It's in a splint right now and hurts like awful.)

Hello marg. I love dry beans any way they can be fixed. I must tr y this dish. I presume the beans are freshly cooked and not canned. I have seen the dry beans in salads before and they look so good. My family only eat re-fried beans in summer with a taco supper.
Do you think think making this dish and putting it through a blender or mashing the beans would make a good dip like hummus? It sounds like it would make a good dip for tortilla or corn chops.

I never buy canned beans. These are bought dry, soaked, cooked without salt. Then you add the chimichurri (the dressing). I usually buy a kilo of beans, soak and cook all of them and freeze what I will not use. I would use garbanzos (chicken peas) for humus. As for blending this, I suppose that even if it´s not humus, I´m sure it would be awesome as a dip.

I use any kind of dry beans. As I´m a thrifty lady, I shop and check which ones are cheaper. These were a white, smallish variety. They tasted awesome and costed a lot less than red kidney beans.

I love beans, should use them more.. They have a sale in a nearby store sometimes, and I found a cheap glass jar with Chili con carne sauce with beans but no meat. It tastes great with almost any food, rice, potatoes, fish etc.
We have rather cheap fresh salads here too, so I try to eat raw food every day. I was kind of inspired by the blind man I wrote about. He picked dandelions and nettles and some other leaves and he lived till 99!
I believe his diet had a lot to do with his positive view of life.
I will write about hime a bit more in ExpertsColumn, as he was a remarkable person. I think he had enjoyed your salad!!
Those who have problems to digest beans, can try to sprout them and cook some sorts a bit or eat mung beans and maybe others raw in a salad.

Yes!! Sunflower seeds are easy to sprout and taste good! Thanks for reminding me.
One friend is planning to have dandelions indoors to get salad in winter!
Some time ago I got a mail from a business friend about how amazing things lemon peel can do for our health. Have to start a discussion about that. I hope to find some organic lemons in the store! Maybe you can find some where you are.

My older grandchildren are vegetarian (or at least in a vegetarian stage) and they are making sprouts of a lot of seeds to eat. A mylot friend told me some montha ago about planting sunflower seeds and eating the sprouts instead of lettuce. I bought some seeds just before my vacations and now I`ll make them as I`m planning on eating grass for at least 2 weeks to make up for the kilos I put on

Green onions are milder than the other onions. I use them when I have them on hand. I eat more than my share of eggs in other ways as I´m an omelette addict and find that is the best way to use leftovers. So I don´t usually use hard boiled eggs for salads.

That looks delicious! I eat beans a lot and about to put another batch in the crock pot. I buy the mixed beans sometimes it comes with a soup flavor pouch, I don't use it. I just put in salt and pepper and dry mint and let it simmer for hours.
I love beans and always looking for new ways to prepare, thanks for the recipe. I don't have all the ingredients today but I'll try that for my next batch. I love cilantro flavor.

Cilantro is a good adition to many dishes. This recipe is a favorite among my friends and family, so I always make a bowl for parties and barbecues. It´s also filling and a great helper when some of your friends are vegetarian. I normally cook specially for my vegetarian friends if I invite one or two couples. But for a big party, I prefer a buffet with cold cuts and salads.

Wow, thanks for the great recipe idea! I try not to eat a lot of meat and beans are a great protein substitution, but it's hard to find new and interesting ways to eat or cook them. I have always been a fan of bean salads but I never really knew a good way to make them, and this was a great idea I'll have to try! Thanks!

This is a very easy way and I guess you can do it with garbanzo beans too although I have never tried it. I always make it for buffet parties or barbecues as everyone like it.

That sounds really interesting! I have not heard of this before. Are the onions and tomatoes cooked or is it all cold? I take it you cook the beans before putting this all together (but that is just a guess on my part). I hope your life is going well now! Have a great weekend!!!

Hi Deb. I soak and cook the beans. Usually I cook the whole pacakage (no salt added) and place in the freezer the rest, in separate containers so that I can use it at different times and in different ways. The rest is uncooked. But if you have digestive troubles, I´d skip the garlic and I would pour some hot water over the minced onion and then place it immediatly in cold water. Id cilantro is too much, then use parsley. My life is wonderful, Deb. I´m not thinking much about my tummy, as I don´t have yet a doctor´s appointment. Meanwhile I will have my vacations. We will see later on. So it´s St. Maarten.

That sounds good--sans meat. I've made vegetarian chili before during the warm months and served it up later cold; the results were rather yummy.
Beans can be great at any time of year, although we often do associate them with hearty dishes for cold winter days.
