What did you make for dinner? We made a new meal from left-over's!

We didn't want to make something new for dinner since we had left-over's in the fridge.
Recently made a brisket of beef and there was lots of meat left-over. So we took a knife and shredded the rest. Chopped up carrots and added the homemade gravy in the pan and heated it up. Once the meat was warm we added a can of corn and a can of peas. Then made rice and put the whole thing over the top for a delicious dinner.
It was quick and easy. Tasted great and was filling. We used up the left-over's and had a completely different meal. The same foods as a few days ago but it was enjoyed like it was made from scratch tonight.
So, what did you prepare for dinner?

Your dinner sounds tasty. Last week we had an outing and we bought like 2 bags of fried chicken in publix and only 4 of us ate it. At the end, we got like 1 unopened bag and 1 fourth left with the other. That is too much chicken so I can't make myself to throw it. What I did was look for some chicken recipes online and recooked it. I had to take some crust off and it was sooo good.

I don't like throwing anything out either.
You could have taken the meat off the bone and made some chicken salad.
Maybe start a pot of soup and add the cooked chicken meat to it when the soup was almost done cooking. Since the chicken was cooked it wouldn't take long to warm up.
Then again peel off the outer coating and reheat the chicken with some gravy. Campbell makes a chicken gravy that is pretty good.
Take the chicken off the bone, shred it and pour BBQ sauce over it and warm it up. You'll have pulled chicken sandwiches.
Just a few other ideas of what to do with left-over chicken.

Ooh this sounds good, and a Good way to use left over meat. We have been known to do many things from time to time when we have left overs, especially with meat. It always makes the Food stretch further and another Good meal as well.

It is nice to receive the compliment! And, it is always nice to find another way to serve left-overs to please one's family. A little change here or there can bring on a complete new flavor or texture that will be a hit without anyone saying we are having that again!

yes I make those kinds of concoctions all the time. I used what ever veggies I can find for that.

Wonderful that you also use left-over to make new meals. It is all good food and when we stretch it out with a little imagination no one feels like they are eating left-overs for dinner.

Nice that you had something good and was able to enjoy yourself by going out after a long week. It is nice to get out of the kitchen every now and then. Well if you're hungry for rice and chunky soup can we guess that may be what you plan today for lunch or dinner? Enjoy!

I had a healthy choice Asian meal. I cooked some rice and nukes the dinner and then split it up into small meals dice I can only eat a few ounces at a time.

That sounds really nice since most Asian dinners are packed full of veggies. It is a shame that you can only do such a little amount at a time and not eat a smaller portioned meal. But this works too. Hopefully soon you'll be feeling better and can eat more of the things you really enjoy once in a while.
I saw the photo your daughter took, wow, you really did get a short haircut there my dear. But I know it is making it easier for you in many ways. Plus it is a lot cooler for this time of year with these extreme temperatures we've been having.

sounds delicious! i myself also loves to cook. but for now i can't. I just buy on a carenderia for food due to some circumstances. I do not live in my home, I just boarded since my school is very much far away from my home. I usually cook foods to save money. :) I usually cook fried rich with lot's of leftover meat, fish, egg, then a lot of veggies such as peas, carrots, cabbage. It's also delicious :D

I remember those days when in school. Kitchen available but real cooking was out of the question. I did get bowls of homemade food when my Mom came up to visit - that was great. But you seem to be doing well and definitely eating from a healthy array of foods and vegetables. Good for you!

That sounds great! We've been trying to do more of this as we are trying to reduce our food wastage.
Tonight we had nachos with chili. It was good but our chips were a bit stale so it could have been better. Still, it was very fun, too.

I really don't have to worry about wasting food around here. The guys are big eaters. Teenagers whom can put away a ton of groceries and seem to lose weight every time you look at them.
We haven't had nachos in a long time...I made open tacos once over nacho chips and that was a big hit. Chili we usually have when it gets cooler...so hot around here adding more heat from the spices is just sometimes too much.
Glad you enjoyed yourselves and had fun with the chips too.

Last night, I didn't prepare dinner. We are all going over to my mom's and spend the weekend there so we just went some to go burger king sandwiches, fries and burgers. We made sure there are no left overs since we will be gone for 2 days and I don't want anything getting bad even in the fridge.

That is nice every once in a while. Burgers are a nice change from normal dinners. I would do the same thing. Clear out the fridge when we go away too so not to come back to a mess in the fridge.
Hope you have a wonderful time at your Mother's house. I wish I was closer to be able to do that too. It is tough being far away from home.
