I really wish I could cook more healthy food... but I am too busy

Do you have the same problem? Any suggestions for healthy meals which are also really made quickly? I feel guilty that I often tend to cook only pasta, pizza and other simple meals as they are ready so quickly and do not take up much of my time. But they are not that healthy. Besides I am not much of a cook. I often feel it is a waste of time... spending an hour to cook and then eat everything in 5-10mins

I love to cook, but you are right - it is time consuming. In the heat of this summer I rarely cooked - if I threw together anything it was cold salads and sandwiches. Although I like making tacos and pizza and more elaborate dishes, too. I have some specialties that take a while to make - like bagged wild-rice stuffed cornish hens. They are placed inside paper bags that are soaked in vegetable oil, then baked in the oven. The sauce for the hens is cooked stovetop first, the hens are coated in flour, then the sauce, then stuffed with the wild rice, then place in the bags -which are first oiled...you can imagine what a job that is! Yet my family loves them. Fortunately, I make a whole small hen for each of us - which is usually too much - so that means leftovers the next day and no cooking - just microwave re-heating.
In the winter I'll make a pot of stew sometimes, or chicken and dumplings.
I believe in making extras - enough for a second day - if I am going to spend time cooking. That way I get a break the next day.

We've also been getting a lot of take out in this heat - Chinese, mexican, etc. etc. I know it's not all healthy, but I figure - as long as I can eat it and survive, it's healthy enough.

Oh my goodness these hens sound so delicious. I also have a recipe for cornish hens stuffed with wild rice and red cabbage I believe. I have not made this dish since I stopped being a domestic goddess.

Spending an hour on making a healthy meal is not a waste of time. If you take the time to eat right now and prepar the meals, that's time you won't waste later in life sitting in the doctors office because you didn't want to take the time to cook.
Cooking or eating healthy does not take a lot of work. by the time that frozen pizza bakes for 45minutes you could have baked some chicken or fish and cooked some vegtables and rice in the same amount of time. How hard is it to grab a piece of fruit for desert or a snack. As far as I'm concerned eating healthy is a whole lot easier and you don't have to be much of a cook to do so.

There are several healthy meals that can be cooked in a small amount of time. And if you have a fridge, you can make twice the amount and save half to reheat. You can make rice in 30 minutes with not much work. And the rice can be kept in the fridge for over a week to eat with eggs, beef, sausage or sauteed veggies.

We have the same dilemma about struggling to serve/eat healthy food. But if given enough time, I could prepare something really healthy for my family.
I have no problem in cooking coz I have been cooking since I was in College. It is just the time that it takes to cook that hinders me sometimes in preparing a healthier food choice for my kids.

I have the same problem,i have no time to cook by myself,so everyday i have to eat with fast food outside,i think it is bad to my health,but i have no idea,i am looking for a more freedom job at present,if i succeed,i also can cook by myself and benefit to my health.
it seems cooking is a waste of time,but when we take the health problems into account,it simply not the case,there are no other thing more important than health,so cooking by ourselves is very meaningful.

I love cooking but i am not a good cook..sometimes even i face the same problem..I dont get time to cook for myself..Later i decided to prepare a menu what i need and which food keeps me healthy.. once you prepare a menu for breakfast, lunch and dinner then the next step is , u need to make sure that all the ingredients are available. then its very easy to cook.. most of us waste time in searching things.

I wish I could help you out I kind of have the same problem. May I suggest maybe crock-pot cooking you can do a lot of things in a crock-pot. I cook a lot of the same foods quite often and I am trying to find new recipes I have got a lot saved on my Pinterest page that I am going to try. Yes, I definitely can relate. I used to feel exactly the same. But then I took the time to do some research on exactly this, and found quite a few websites with tons of healthy recipes on them. I wrote those down, and then started cooking accordingly. Of course you will still get bored with the recipes eventually, but then you just look for more healthy ones online. It really can be done, it just requires some research and effort!

I know you have the link to where I write from a previous email. As a cooking examiner and chief chef at home cooking for a family I have many recipes. Now I share them online besides cooking every night.
I know what you mean about time spent and how long it takes to eat it. I have spent a day in the kitchen to find dinner time is so short. Teenagers wolf down food without thinking, tasting or remembering what you cooked.
I do like to make simple meals too and write out the directions so anyone can understand and follow them. I started doing this so when the kids got old enough to start making something for themselves they wouldn't need a dictionary to figure out the steps.
If you are looking for something specific I can also send you a link to that if I have it in my box of recipes. Actually my cook book pages are all in plastic protectors in a catalog rack on my kitchen island so there are quite a few to make variety the spice of everyone's life here and there.

I love in the whole house and my son lives in the added attachment. I cook once or twice a week. There is enough for three portions which means I eat the first portion when I have finished cooking and then dish out a second helping into a plastic container, and then the third portion goes into the fridge for two or three days later. I eat red meat only two or three times a month and usually it is lamb knuckles with basmati rice; either a curry or a tomato bredie. When I write I cannot be bothered by anything. I have chocolate, and Greek yogurt every day. How is that for living?

I feel the same way, you burn iout soo much calories while cooking and what if you are not getting them back from what you eat.
You can have healthy food if you just add diffrent salads in yur meal, sometimes once a weak you can spent an hour to cook atleast your health worth it, eat alot of veggies, fruits, nuts and try not to eat junk food as much as you can.
If you stay healthy only then you can last longer, being efficient and look amazing.
