Simple Spinach without the chalky taste

I like to eat spinach but when I am doing it very simple with a little EVOO and may be some tomatoes or just oil it always seems to taste a little chalky. Does anyone know why that happens? What ways do you do spinach that eliminate this taste?

Do it half cook and it will not taste chalky.
Just stir fry it very quick on butter for few minutes and have it half cook.
Stop the fire and add oyster sauce.

don't you find the spinach chalky? cause you don't like palak

palak is not just over cooked- but uhmn, I don't know how to describe it.
That is why I said "HALF COOKED"
