Potatoes can last a long time if you keep them in a cool, dry, dark place. If they start sprouting, then it is time to cook them or lose them. If you have a lot extra, peel them, boil them, then you can chop or shred then you can freeze them. Now you get about another 6 months out of them. BUT keep in mind, when you freeze them, the lose some flavor so be sure to at least salt and pepper them real good when you use them. I like to do this and shred them for hash brown then put them ziploc bags. You can have one portion at a time!

You can make fries. You can also make mashed potatoes =- and make a shepherd's pie. You can cut them up small and put them in soups. You can also keep the rest in cold storage. If you live in a hot climate, it wold be best just to buy a few at a time. If you live in a cooler climate, you can keep the rest for a month of more. Just be sure to remove the eyes.

I will have to give one . It will have to put in an email. But there are lot of variations. You can try AllRecipes. Refrigeration potatoes does not work for me unless they are already cooked.

I guess it all depends on where you are from, what you normally use potatoes for in your country, etc. I usually use 10 lbs of potatoes a month and cook them in various ways. They can be refrigerated or kept nice as long as in a cool, dry, dark place but they won't last for a long time. There have already been some good suggestions made here for you but I'll list a few of the things I use potatoes for, and then you can always look online for recipes for how to use potatoes and how to preserve them as well. You might be able to can them, freeze them, etc. I don't care much for freezing potatoes because they become a bit "pithy" as my mom would say. I don't know how to describe what "pithy" is but once you eat frozen potatoes you will know.
mashed potatoes
potato soup
potato salad
French fries
steak fries
baked potatoes (with all types of toppings of choice)
cut up and put in soups of all types
cut up and used in curries
hash browns
casseroles
The lists can go on and on and on. Potatoes are very versatile and can be used in a lot of ways.

I wish you could send me some potatoes, maria. I don`t know why, but potatoes here are so expensive I`m not buying them. I`m paying almost 2 dollars for a kilo. I like to make mashed potatoes, shepheards pie and use them in all stews, casseroles and cazuelas I make.

WE don`t have vegetable sales but there are places where veggies are cheaper. The best is to buy veggies in season.

They usually very expensive here as well. Sometimes over 1.00 per pound. But this market sometimes put a veggie on sale each week at a great price. Was potatos this week. See you soon dear.

Whoa, 10 pounds for .50??? That is a great deal..Here we go through potatoes so quickly, 10 pounds isn't that much, but when I find I have too much I bake them and refrigerate them. If there is still way too much, I believe you can freeze them, I just haven't done that yet and I should look into it, because we just bought a bag and then my husband picked up another last night...

It takes about 45 pounds of potatoes to serve my family for a month. I bought 30 pounds and it wasn’t enough. I bought 10 more pounds and they won’t last the rest of the month… so I will be buying more. From now on I will buy three 15 pound bags and hope they last.

Yes, was a great deal. They cost me 1.00 per lb. most of the time. I also bought a bag for a friend who has 5 kids. She was very happy to get it.

One of the simplest things to do with potatoes is to make garlic smashed potatoes. You can use either fresh or jarred garlic.
I also like to quarter them, toss them with some seasonings, and roast them. Slicing them down, seasoning them and baking them to create baked potato chips is good as well.
Then, of course, there is stew... I like to make tempeh stew--much in the same fashion one would make beef stew. I think that stew is an excellent, healthy and inexpensive dish. You can incorporate pretty much any vegetable into it, and it is a great way to clear the fridge of any veggies that are getting close to turning bad.

I love potatoes, maria.
Well, you can have them in pochero, menudo and other viands. You can have them as french fries or fried potato wedges. You can also have them as mashed potatoes.
French fries alone, i can consume a lot of it at home, because it's everybody's favorite dipped in a mayo/catsup dipping!
And yes, salad , i love it too!

Well, in addition to making potato salad, you could make awesome fries and freeze them. You could also make mashed potatoes and free them as well. You can make potato crochets. Maybe a potato soup. Potatoes and eggs. I know I love potatoes and eggs. My mother used to make them all the time, like peppers and eggs. I think the possibilities are endless. And you could also give some away.

You do not need to cook then at once,I cook them when I need,may be twice a week,and if you keep them in a cool place,they last for a while... I suggest to fin all kind of recipes at"all recipes.com" I use that site a lot,and I found some really good tasting and easy recipes there.

Hi maria, of i will help you and making potato pancakes is very simple, you just need the following ingredients: onions, salt, eggs, ground pepper, all purpose flour and cooking oil for frying. Finely grated the potatoes in a bowl and drain off the excess fluid. Mix chopped onions, salt, eggs, pepper and flour then fry it until turn golden brown. It's crispy and delicious too.

Wow! that's so cheap! potatoes are a bit expensive here in my place. But what we do with potatoes is we make mojos with it. Just the other day I made mojos for dinner, though it wasn't taste like the way I expected it to be but still it was all gone. Hubby and in laws loves it. You can also put it aside for the next day use, anyways, it won't rot that easily.

You can make pogo-like potatoes with cocktail hotdogs inside. Mash potatoes and make them into balls, stuff cocktail hotdogs inside and coat them on egg, flour and breadcrumbs. Deep-fry them until golden brown. They are ideal to dip on banana catsup or mayonnaise.
For the rest, make potato wedges or mojos and fry them. You can even make them as stuffing for your omelette. Others that have already posted here got some good cooking suggestions.

i guess that is quite a lot maria, why not make chips out of them? you can boil them, then fry them i like them that way then sprinkle with salt or some cheese.

10 pounds of potatoes isn’t that many. Just put several of them in your vegetable bin in your refrigerator and keep some out at room temperature to bake in the oven or the microwave. I buy two 15 pound bags when I go shopping and I run out and have to buy more before the month is done. They just don’t last in my house. We have baked potatoes every day, sometimes twice daily. I buy them because they are cheap. I can buy 15 pounds for $6 and change at Walmart.
