Cooking Healthy!!

Since i have a kid that doesn't want to eat vegetables.. I cooked leafy meatballs today.. and its so delicious!!

You can also chop up broccoli fine and add it to corn muffins. When I make corn muffins I usually put in a can of creamed corn to the batter. It makes them really moist. Another way is to bread them. Cauliflower, zucchini and eggplant cut thin and breaded in egg and breadcrumbs fried will take away the veggie taste the kids don't like and be hand-held and crispy and crunchy. A texture they do like. Reminder that reheated they lose that crisp texture so making a little here and there will get them to eat more. Add some to meatloaf. Mix it in and they won't notice the difference because the meat and its juices will take over the flavor of the vegetables.

When my son was younger, he didn't like veggies but I would sneak them in his food and he was eating them without knowing! Meatloaf is a mixture of various foods, including ground meat, eggs, onions, and some bread crumbs. Add a little shredded carrots and broccoli will give the meal a nutritional boost, but won't change the flavor. Chili is full of beans; grate or dice in some carrots, onions, mushrooms, and zucchini. Putting cauliflower in mashed potatoes, carrot cake and zucchini bread work out good, too! There are a lot of great recipes you can find online! By the way...what are leafy meatballs?!

That is a great idea to cook vegetables just like meatballs are cooked.You can also make some fried burger just like as pork looking vegetables.You can use smash bean curd,sliced bell peppers,mixed with egg.The children likes to eat as if they were eating pork.I have to make them eat more vegetables than pork or beef,that is why I keep on innovating vegetables to look porky when done.
