Reusing cooking oil

Last night I was invited by a colleague in my city for dinner, she too retired with me; she worked as Principal of a Women’s college. My wife saw her reusing cooking oil kept in the kitchen; that oil looked black; it was burnt. I was sure it will cause heart burn and acidity. It is known that, cooking oil is reused in many homes, in the hotels and restaurants, in the eateries and by the road side fast food stalls and vendors. So I called her and said, today is our fasting but since you have invited us, we came to see you and wish you merry x’mas; please give us some fruits and a cup of high tea without sugar. She was happy, we ate the orange and apples she gave, drank the tea and left. Did I do the right thing? [b]If I would have told her about that harmful recycled oil; she would have felt offended in front of all. May be I will tell her over phone some other day. We do reuse the cooking oil, at times. I bet she knows the harmful effects. She possibly has financial constraints. If not, she is either a miser or does not think it would effect too much. Whatever be her reasons, you did the right thing. We have a right to tell, no doubt. But that right is confined to extremely close quarters. We should not be correcting the world, at least in small small things, as it creates disharmony, and we would not be left with many friends. I usually offer only fruits and tea. Most people eat fruits. So it is a safe bet.

we re use cooking oil alot here in mexico. Its very expensive here. But I never use it again if its dark or not clean looking. I know some people here keep it seperated in cans, and use it again for the same things like tortillas, or meats.

Reusing cooking oil is really bad for health. I think you did the right thing at that point of time. Do explain to her about the danger of recycled/reused oil when you have the opportune time with her. I normally used fresh oil to fry fish or cook. However, if I do, the maximum is just twice and that is it! But my mum used to tell me that the oil are expensive, asked me to use more times but I said it is no good. So, the best solution is less do frying, more on steaming food or boiled, or better still... eat fresh!

You have to tell your friends about the toxicity of reusing cooking oil. You'll do them a no harm, on the contrary! I read even cooking, that is frying in cooking oil is not good for health. High temperatures make to develop toxic substances. Instead, olive oil is good for cooking for it is more stable than others.

We have never used olive oil, normally no one uses, will buy a bottle and tell my wife to cook. Thanks for sharing.

hi, actually in the house we also use a re-used cooking oil but not to the extent that it will turn to black color,maybe twice or thrice when we re-use the cooking oil and after that we trash it because the thing we fried or cook in fourth use of oil will be burnt.

I think you handled it very well. You did the right thing. As many people recycle oil. If it was black, than it could mean they do not have money to replace it. If you woul dof said something, the person woul dof been offended...you did good.

I think you handled it really well, not offending her, and saving face while taking care of your own health.I will put oil in things, but mostly do not fry foods in oil. I use it straight from the bottle into recipes. There are places in our country where you can take used oil and they recycle it into diesel fuel.

hi professor you did t he right thing I feel as she might have been offended and perhaps one time you can gently tell her why reusing cooking oil can damage ones health. I have never done that as when I was doing my own cooking I used just enough and no m ore so I did nmot waste oil nor add cholesterol making oil to my diet. My husband was a professional cook and he absolutely hated that reusing cooking oil as it had pieces of burnt food in it. It just not could be healthy to use it in cooking food.they do have some laws here in California about reusing cooking oil and will shut down a cafe that has dark discolored cooking oil and is using it to cook food in.

I agree with most of the responses here that you did the right thing in your desire to protect your health and commend the way you did it without offending your host. Reusing cooking oil is not advisable for our health and as much as possible I prefer minimal use of cooking oil be it new or reused.

yep, that was the right thing to do. And it's also okay to tell her later about the truth of reusing cooking oil so she won't run the risk of health issues herself. Perhaps you could mail her this info: http://en.wikipedia.org/wiki/Deep_frying

The reuse of cooking oil is not advisable. Since the cholesterol level is higher in that cooking pot with reused oil. It can lead to unhealthy practice, especially ffor those who have heart ailments or hypertension.

I think you handled this situation beautifully. It's true that reheated oil can be dangerous, but a lot depends on how it has been used before. I agree that I would not like to take a chance eating it. Good Job. Blessings

Uncle mostly when we all women make the puri in oil then the remaining oil use for fry the sabji. That is reuse the oil once again it was black but good. No effect on body.

Yes you were right.I also observed people reusing oil in hotel and in road side stall to prepare samosa and other oily product.Whenever I had that I got severe heart burn and other gastric discomfort.Once I asked my friend who is a doctor regarding this and he suggested me not to have any product made from reused oil.He also told me that if you regularly consume product made from reused oil it alters the lipid profile in body and increases the level of Very low density lipoprotein which is potentially harmful for cardiovascular system.
