I am probably a little too late for this as I guess the meal is in yor tummies now! However, I would have been tempted to slice the carrots and celery into sticks to dip in some of the bbq sauce. I would also like to dice the potato into small cubes and fry like patatas bravas. I am sure you could come up with a local twist with those ingedients. I love Mexican food...hang on...I'll be there in 10 hours!

nope, its 345 pm here. I eat at 5pm. Ill set a place for you as well. it smells so darn good. I made bbq chicken, with baked potatoes and steamed brocalli. I also will have home made corn tortillas with it. Id love to have you here..

Hi Maria.You are making me feel very envious! It is 00:33 here in the UK as I write but your meal still sounds very appetising. I hope you have a wonderful dinner and thanks for your lovely offer.However, I shall have to sit and sulk while you tuck in to your bbq chicken! Have agreat evening and spare a thought for me in the cold,dark,wet,miserable UK!

I did mine here, It really turned out well. I made it with baked potatoes. On monday Ill make the left overs with rice. Happy new years...

BBq chicken is great with fried rice. You can serve pieces of chicken WITH the rice or put smaller chunks of chicken IN the rice.
The rice can have all types of veggies in in plus some soy sauce for flavouring. I brown the rice in butter or canola oil an then increase it with chicken stock. YUM!

I would do a baked potato and fill it with your beans. I also like the idea of a potato salad. You could always make rice, beans and salsa. I love this one placed in a burrito. Oh my gosh, soooo good. I think I'll put that one on my menu next week. You could fried potatoes with onions and carrots. So many ideas!

I think baked potatoe would be good as well. My chicken is almost done here. Smells so good. Ill put a few baked potatoes in now. Im hoping my brother stops by later on today.
Since we are both closed here on sundays, thats the day he stops by and visits here with me.

I always like a potato salad. And if you have some, I learned a raw zuchinni salad that is out of this world. Tomatoes and green beab (steamed al dente) are other good side salads. I like my tomatoes with some raw onion ( check online "ensalada chilena"). You know that you can make a cold rice salad instead of heating the rice. I prefer just salads with barbecue. And a hot sauce nearby

What you could do is get the carrots, skin them. The steam them, but don't let them get too soft. Make sure they are hard. Then slice them long ways. Once that is done, place then in a flat pan with some olive oil. Put them in the oven and watch them. They will sort of brown. You can also add some spices if you want. It is like having grilled carrots. They taste great because they caramelize a bit. And they are real sweet. Goes great with BBQ.
