What are the vegetables you can eat raw or without cooking?

I need a little help from you fellow MyLotters. After all the holiday food binge that happened recently, I decided to go back on eating healthy now. I am thinking of increasing my vegetables intake but I am worried about how time consuming preparing food can be especially vegetables. So, I am asking if you know some vegetables that does not need to be cooked before eating. I know quite a few but I want to know your thoughts on it as well.

Vegetables like cabbage, carrots, chives, coriander, green lettuce, onions, parsley, parsnips, tomatoes, turnips and others can be eaten raw but you need to be careful when preparing them for consumption. It will be best that you blanch them with hot boiling water after a thorough wash before eating.
You need to understand that there are plenty of contaminants from mother nature and man made ones, so to ensure safety and hygiene for consumption we need to take extra care when we prepare these vegetables. Blanching these vegetables other than killing bacteria, has another usefulness where it makes your vegetables tasty.
There's another way of eating your vegetables that needs cooking healthily - you can always boil or steam them. In this way, you do not need to use cooking oil which is needed when you want to stir fry them. For taste and texture, you can consider adding a little sesame oil or olive oil which are healthier options and light soy sauce (low salt) or oyster sauce.

I like baby carrots - don't need to wash or peel them. Also I cut up celery to make celery sticks. I cut up other vegetables such as cauliflower and bell peppers. I cut them into small sticks and put them in a plastic container in the refridgerator, with some water to keep them moist. I change the water daily.
Then I always have raw veggie sticks handy. I made some dip with sour cream rather than mayonnaise because I think sour cream is a little healthier than mayo.
Also, I eat salads and I can buy pre-washed bagged salads and cole slaw. Sometimes, I cut up a tomato to add to the pre-made salads.
These are ways that I eat raw vegetables which are easy and quick to prepare.

Hello ladyhemingway, so thinking of a little detox kind of diet? :) The best vegetables that you can eat raw are carrots, cucumbers, cabbage, lettuce, beetroots, tomatoes, red and yellow sweet peppers, spinach, bean sprouts, and broccoli etc. You can make these into salads with a little lemon juice, pepper and salt to taste! I eat brocalli and dressing. Carrots, and celery sticks. These dont need to be cooked to eat them.

Vegetables like carrot, cabbage, peach, raddish, tomato and salads are rich source of vitamins and minerals. You can eat them without cooking. these are good raw food and low in calory.

I really like washed baby spinach, it seems to suit me well. It does not need to take a lot of time to prepare any food. It is all better for you than fast food or restaurant food, that is for sure. I have been eating salads, but I will also just put my vegetables on a plate and put a hot piece of meat on it and it steams the veggies. I also add salsa to many other foods and that is a good serving of vegetables.

I've gain some weight over the holidays too and would be sticking to some veggies too. Carrots and celery are two vegetables that can be eaten raw that I can think of. They both are very healthy and taste pretty good. If you don't like the taste you can try dipping them in some peanut sauce or some peanut butter.

Time consuming? It doesn't take much time to wash and cut up veggies. Nor do vegetables take much time to cook. I prepare most meals from scratch, and I often spend 45 minutes or less preparing and cooking beautiful, healthy vegetarian meals.

tomatoes is great. I also eat cabbage and lettuce. Add some mayonnaise. And it's good.

Wow,first of all is tomato,I often eat it in raw and actually that will be better than cook.Secondly is carrot,OK actually I just eat these two in raw.
