French fries and other fritters

I was invited for a light diner to a niece`s home on Sunday. She had a big machine where you "fried" all sorts of food with no oil. She is very much worried about weight as she used to be overweight and then started with a prediabetic problem before being 40 years old. She had some fried and empanadas (sort of very small fried pies). When I saw the gadget I watched it greedily, but after eating the fries, I decided that I like them deep fried in oil. And I`ll compromise, eating them once in a while. How do you make your fried food? Are you worried about deep fried food because of the amount of fat? Share your ideas.

I've recently learned how to do french fries (potatoes) in the oven. It's so simple and they come out crispy and taste so good. Some people complained that theirs didn't turn out to suit them and tasted too starchy. The secret is that after cutting the potatoes in the shapes you want; wedges, sticks, or the really thin sticks, soak them in a bowl of cold water for about thrity minutes. Drain. Line a baking sheet with paper towels and dry the potatoes with more paper towels. Then add salt, pepper, and sugar and oil. Toss it all in the bowl and then put 'em back on the baking pan and bake for 15-20 minutes at 450-475 degree oven. You'll have to turn them half way through. After doing the potatoes, I've done other veggies; mushrooms, carrots, broccoli, and even rutabaga and parsnips with onions and bell peppers. Shake different spices on it all; garlic powder, onion powder, thyme, rosemary....whatever strikes your fancy. I started doing things this way because I was becomiing concerned about all of the fried foods I'd been eating. I love 'em. But I'd like to live long enough to enjoy all kinds of food. So I've changed my cooking methods quite a bit.

Oh, I forgot to say.....the sugar helps to make the potatoes/vegetables crispy on the outside and tender in the inside. The soaking is done to release the major amount of starch in the potaotes.

I use extra virgin olive oil and not much of it. Just enough to make a little coating. Don't measure really. Just a few drizzles.

That sounds interesting and I would be willing to try it, although I don`t know how "healthy" it is if you add oil to the mixture. Probably that is less healthy and a lot yummier.

Hello Marguicha. In my home country for one hundred and fifty pounds or more it is possible to buy an air dryer. In you have one you put in a spoon full of cooking oil before doing home cut french fries. If you use frozen french fries you don't have to an any cooking oil. I did consider buying one but it would have been an expensive stretch financially. I was given a microwave chip plate. I put a hand full of frozen chips on it after preheating it for 2 minutes. The chips come out and my kids or guests eat them up readily. In my home country in a supermarket it is possible to buy a pack of four boxes of microwavable chips. They come in straight cut and crinkle cut. I like to cook small round things which are made from potato and onion. I keep frozen ones in my freezer and then cook them in my oven. I like some of those and a mixed salad. I eat fried chips occasionally and add plenty of vinegar. I wish to keep my weight the same or lose more weight.

Hi again Marguicha. It isn't a hair dryer. It is a healthier sort of fryer. It is called an air dryer in my home country. I can't imagine you buying one since you prefer the taste of chips cooked in an ordinary fat fryer.

I sort of got confused with the name "hair dryer". I think that the best thing for me is to make french fries every 2 months. That`s not so unhealthy.

hi marguicha oh es I just d o not think french fires would taste as good not fried in oil as that gets them that crispy golden brown that we all love. I know too much oil is not good for us but it sure does make fries taste delicious. here at Gold Crest retirement Center they oven bake them and sometimes they are really tasty and sometimes they are not and just limp which is not crispy like I like them lol

I love those crisp french fries we make at home. I have a dish with a paper towel at the side and fry and eat, eat and fry. I know I shouldn`t eat that,, so I indulge only once every two months. I hate limp fries and they have that a lot at restaurants. You ask for fries and start dreaming and when they come they are limp

I'm not an incredibly big fan of deep fried food but for certain food it is really the only way to cook it. I remember seeing those cooking chamber things that you are talking about that gives you deep fried style food without using any oil. I think that it is a great idea because even though people know that deep fried food is bad for them they still want to eat it so they need an easy way around the bad part of eating bad food. I don't really like fried food because I know that it is bad for you. Not only is there a lot of fat in it but there is also other toxins from how hot the oil is heated up to as well.

To tell you the truth, after trying the results of that gadget, I would not spend any money in it. I don`t make a lot of fried food because it is expensive as I never reuse the oil. Roast and baked food are very yummy and they are healthier than fried food.

I love to eat fried food that's why I'm overweight..LOL.I really wanted to change my food intake style for health reasons but I really can't help not to try fried food.. It is really hard to switch to a healthy food intake.. really hard.. Hope I can do it also...

I love to eat many foods I shouldn`t. That`s why I have reached a compromise and eat those foods once in a while. I would be crazy if I could not eat fried food or chocolate ever again in my life. But I also know that if I do it in reasonable amounts, I`ll be healthy enough for a longer time. My mother cannot eat salt or sugar anymore ever. I would not want to reach that level so I take care.

I do eat fried food, but i cant really say am the greatest fan.Instead i really like baked foods especially cakes and bread i don't know how to avoid them because i crave them badly.

I prefer salty food and not sweets. So I make roasts (chicken and roast beef), stews and soups. I seldom make fried food, but I love it.

hi marguicha oh you have a point there as some commercial places do not change their oil daily and the food has off tastes to it. Home fried at least you know the oil is not reused over and over again. here they brush them with some oil then bake them as its a retirement center for people of all ages and they do think about our health to some extent.Sometimes they get them crispy and a lot of times they do not too.

Hi marguicha, it is always better to take oil free food. Oil free foods are healthy. Oily foods are the main reason for heart disease and diabetes. You need not to have machine to cook oil free food. First you put a pan on a oven with some slices of tomatoes and onions. Then water will come out. Then you put food items on your pan. Food items may be vegetable or meat(not red meat}. When water dried up pour few drops of water on the pan. Do it continuously till the food is prepared. It is easy to fry all sorts of food by same way. But without tomatoes and onions.

To make fried food need not to mix tomatoes and onion sauce.Few water is needed in place of oil. I cook occasionally. I'm not a expert of cooking. I have to learn more from you.

I know very well how to make stews, friend, but I was talking about deep frying. French fried potatoes have nothing to do with a tomato and onion sauce, something that I often use when cooking.

I`m a good cook and have been cooking for decades. I was confused by your answer as it had nothing to do with the subject of my post. Fried food needs some oil. That is why it is called "fried".

I love french fries potatoes, but I shouldn`t eat them. So I make 2 middle sized potatoes every 2 months and that`s it. YUMMY! I do the same with chocolate: I`m addicted to it, so I never buy it. I eat it all though when someone brings me some as a gift.

Actually some food taste when they are made through some old ways so if something is to be fried it is to be fried for the real taste..I do eat fried things sometimes not always because I am also conscious about managing weight and do not want to accumulate much flabs..But yes we I mean our family eats french fries the fried way some times ..

yes I do agree the taste changes with the method of preparation.My kids love french fries and Me too even my husband who is very conscious about weight and also has diabetes sometime eats this.By the way with what sauce you eat just chilly and tomato sauce or any special formulation?

I bake, roast and stew a lot more that fry. But baked or roasted food has its preparation for that and these fried with no oil seemed as if something important was out of the recipe. I prefer fried foods once every 2 months, but eating the real thing.

for me when i have something to fry of course oil is the best way to use for cooking of fry food,and the amount of the oil is also strictly depend upon the food that i cook,if it is pork of course its minimal only but if it is vegetable i put a little bit of oil.

Some foods are deep fried. For that I use good oil and only have them once in a while. I love fritters and fried dumplings but it`s not healthy. French fried are like that too.

is it more on psychological thing.. I mean if you just thought that if it fries it should be deep fried. I think it is something your brain is telling you it is better tasting when it is deep fry. I don't know am not sure. but yes French Fries who will beat that.

French fries are deep fried, normally. I use the oven for some potatos that I used to deep fry, such as duchess potatoes. But oil is an ingredient, so it cannot only be psychological.

I do use brainwashing for not eating so much of the food I love. I do not eat french fries atrestaurants. I make them at home and it`s hard for me to make them. First, it`s expensive as I don`t reuse the oil. Second, I don`t like the process (paring, cutting and so on) because I will not eat more than 2 potatoes (third rule) and they are in my tummy before they reach a plate.

hi marguicha. as much as possible i try to stay away from fried foods. i usually eat grilled food or steamed food. if i do eat fried food, i usually use olive oil to fry it. sometimes i use the food natural oil to cook it and i do not add anymore oil. i agree that there are certain foods that should be fried. otherwise, it wouldn't taste as good. i'm very much like you, i eat fried food once in awhile usually during weekends which are my cheat days. cheers and happy mylotting. cheers!!!

Honestly, I'm not the type of person that really eats all that much fried food simply because of the fact that it isn't something that I'm a big fan of. I mean there are some times that I will get an order of french fries or I might enjoy some fried mushrooms or something like that, but for the most part I would rather have the foods that I want to enjoy baked. Now this contraption that you are talking about your niece having does sound like something really interesting.

I thought it was interesting until I ate the results. Fried food is meant to be fried with oil. If you are not a fan of fried food, there`s always yummy baked, roasted, steamed and cooked food.

I do love friend food but I try to control myself in eating and preparing food for my family cooked that way. I can just imagine how it must have tasted the way it was being not fried at all. Although, I do place in an oven hotdogs and nuggets to get rid of using oil. Those food, my kids can tolerate.

I can't handle fried foods. They look so good, but when I eat them, they do not agree with me. The most I love are fries and onion rings. Sometimes, I like to just bake things in a toaster oven and then pour oil on them when they come out. That is actually better for you, as raw oil is better for you than oil that has been heated in a fryer, or at least that is what I was told. But I just do not feel healthy after eating fried foods so do not, but I will say they do smell heavenly!

Some people have that problem about fried food and it is better that their body reject something that is not much good. It happens to me now with fried food that I haven`t made. I only use oil once and only the kind of oil that you can fry with safely.

I am interested in what this "big machine that fried things without oil" is? It sounds interesting as I have had the little household deep fryers before and they do the job alright, but are really more of a hassle then they are worth. Do you know what it was that she was using to cook with?

It looked like a sort of electric oven. I can ask my friend what`s the name of that gadget although I would not recommend it.
