Boy this one is a hard one to decide. I have eaten so many great cuisines that to choose one of them is really a brain buster. When I lived in Mexico it was absolutely fantastic. Didn't and don't care too much for Spanish except maybe Paella if it isn't too dry. Bolivian, Ecuadorian and Colombian were mostly rice, beans and meat... My favorite french food is escargot (snails). My favorit German food are the and their sausages. My favorite Italian dish is Lasagna. In Vietnam the cuisine was close to the Chinese but really couldnt compare. Chinese is great when you are in the Far East or can import the ingredients....Mu Xiu Port, Salt and Pepper crabs, and food from Sechwan are excellent. While in the Far East I also tried Thai, Malasian, Indonesion, Singaporean (is that a word), Nepalese, and Cambodian and they were all good. I have never been to India but I love shrimp curry (real spicy) with all the trimmings including mango chutney, chapati with achar (not sure of spelling). So you can see my dilema..... Hope that answers your question.

If I'm ever in the area again you can be sure I will...Would also like to visit Goa. Itk's stupid but I forgot to mention the food that they have here in Portugal. It too is great. Must be getting alzheimers of something...how could I forget the country where I live now.

For a cuisine as a whole, I'd have to say Italian. Especially pasta putanesca. Oh, to die for!! The story behind this pasta is that they used to prepare this dish at brothels. They would allow the incredible aroma to waft out into the streets, which would bring the men in to the establishment.
