My Aunt gave me this huge bag of them. They are older so they are probably a bit on the brittle side. I'm not sure what I can use them to make as I'm not fond of the corn and prefer the flour tortillas but I hate to waste them or give them to the dog. Any suggestions? perhaps some sort of tex-mex bake of some sort since they are not the freshest?

You can make a delicious casserole with them. I have a recipe called South of the border tortilla lasagna that is really good and uses about 18 tortillas in the recipe.
I can send you the link to my recipe via a private message if you are interested in checking it out.

When I worked in a Mexican restaurant they cut them in wedges and made their chips by salting them lightly and baking them in a really hot oven, like 450. The chips then were good for making nachos or taco salad. I have heard of stacked tortilla bakes. Use a round pan, spread some chili or sauce on bottom, layer tortillas and taco meat, refries cheese and veggies to your taste until the pan is full. There is also a Mexican lasagna.

You can crisp them up in the oven or in a fry pan. You can use them instead of chips for dip. You can actually have anything on them--macaroni and cheese, meat, chicken and cheese and vegetables and use them to scoop it up.
When I was in Mexico recently, my hostess made huevos rancheros, which is fried eggs on corn tortillas with cheese (homemade--YUM!) and/or verde (green) sauce. I can't believe they cook like that every day and are so thin and gorgeous! Anyway, you can also use them for pulled pork instead of bread, or with anything instead of bread.
My kids used to love it when I used flour or corn tortillas, whatever was in the house, and sprayed them with pan spray then sprinkled them with sugar and cinnamon and put them in the oven. They also liked the corn tortillas broken up to dip into their tomato soup.

Hey!! Tortillas? Yes!! I love corn tortillas!! You can put them on a comel and let them get hot on both sides and then put some shredded cheese and melt the cheese on them and you can fold it and have a cron tortilla quesadilla. Yummy!! Or you can scramble some eggs with onions, tomatoes, jalapenos and warm the tortillas and roll the eggs up in them with or without cheese and then add some picante sauace! O.M.G!! I am gettin hungry now!! L.O.L. I like to warm them add cheese inside and add jalapenos!

My ex husband used to make something he called enchiladas (it wasn't enchiladas!) and it was good. You brown ground beef with onions, then add ketchup of all things. Take a corn tortilla and put it briefly in a pan of hot oil, then layer a tortilla with the meat mixture. Top it with a fried egg and serve it surrounded with a tomato/onion/lettuce mixture. It's so good and it's filling!

hi3 snuggle bunnies As the staff in the kitchen is mostly Mexicans they make a really good Mexican lasagna of corn tortillas stacked with refried beans, cheese, green pepper, fried hamburger, tomatoes and o nions in between and baked til cheese is melted and the flavors all combined wow its really so good. and bakedit and oh it is so good. I think that at times the tortillas are pretty crisp and not too young but the filling really softens them and the flavors are just so so good Sometimes they put some green pepper strips in to with tomato, onions,, cheese hamvurger and refried beans so yummy really try it you will like it..
