Sugar Free Frosting

I made a cake for a friend's wedding. She needed the groom's cake to be sugar free. I bought a sugar free cake mix, but I wanted to see what I could make from scratch for frosting.
All I can say is Wow! It is super easy to make sugar free frosting. Beat one 8 oz. brick of cream cheese (yes you can use neufschatel or fat free) until fluffy. Add one box of your favorite sugar free pudding mix.
As a general rule I dislike artificially sweetened things, but in this case I could not taste the sweetener.
You can start with vanilla and add liquid flavoring extracts as well for something a little more exotic. I really liked the texture of this frosting.

actually sounds like it could be super yummy....what flavor pudding mix (sugar free) did you use? i wonder if some might be more successful that others?
i am a HUGE (HUGE HUGE HUGE) peanubtutter fan..... and good recipes for PB frosting/filling??

@fruitcakeliz I used French Vanilla, it had a yellow color, which was one of the wedding colors. I tinted some of it turquoise to match the table linens. Looks like @akuseru has a yummy recipe. I think for frosting in the sugar free type I would use peanut butter and cream cheese in equal parts and probably a milk chocolate pudding mix. Just cause I like peanut butter and chocolate.

Someone shared this peanut butter buckeye pie recipe on a forum I'm on earlier this week. It looks amazing. I'm pretty sure if I make it this week it's going to be demolished in record time.

It did have a nice consistency and was not overly sweet and sticky.

I think without the additive of vanilla or other extracts the low fat cream cheese would make the icing nasty.
We've used low fat cream cheese to cut back but well it was disgusting! (of course we also used this for a cheese ball recipe)

It needs a pretty prominent flavoring to make it tasty. Pudding does that but Mom always said to add a teaspoon of vanilla to everything.

Maybe use regular pudding mix, it is still a great flavor. I mostly avoid sugar free. I do find I like stevia okay, and monks fruit for sweeteners if I am not using sugar, honey or real maple syrup.

Nice idea with the pudding mix. Never thought of that. I've developed slight aversion to sweets since I've gotten older so, I tend to opt for berries on my cakes instead.
