No, I'm not from Wisconsin and I don't wear a cheese wedge hat on my head. But I do love cheese - just about any kind. My favorite is Swiss but I also love feta and Havarti. Provolone is good too. I've tried to limit the amount that I eat because it's so fattening but I always manage to sneak some in somewhere.

Oh my god I LOVE LOVE cheese! I really like any kind of cheese I am not picky.I had some cheese from France once and I dont remember what it was called but it was devine (I cant believe I just used that word). I feel really bad for people that are latose intolerant.

@suziecat7 I really wish I could remember the name of it. One of the scientists I used to work with went to France and brought some cheese back for us. The cheese was hard and it had a oaky taste to it ..so good!

@suziecat7 Yes, Switzerland has many different kind of cheese, I believe that only the one with holes is known in the United States.

There is a farm in Ohio called Young's Jersey Dairy. It's in a quaint little town called Yellow Springs. They have class and make their own ice cream and cheese. I have to say, this stuff is better than half the stuff on the market. By the way, I'm a Gouda, girl myself.

In England we have such a wide variety of cheeses that I'm really spoilt for choice. I think that one of my favourites is Lincolnshire Poacher, which is a hard cheese, something like a mature cheddar but nuttier. I also like Cornish Yarg, which is slightly softer and creamier than Poacher and comes encased in stinging nettle leaves. I don't believe that the nettle leaves do anything for the flavour but it's distinctive, at least!
While we can always find quite a good range of French cheeses, several British cheese-makers are beginning to make their own versions of Brie and Camembert, both of which I'm very fond of.
Not everyone likes blue cheese, but if you do (as I do) then there is really nothing to beat some of the Stiltons made by the smaller cheese-makers (the commercial stuff is alright but usually not ripened enough). I think I've yet to find one better than the one made in Cropwell Bishop!

@suziecat7 I very much doubt that you'll find Cornish Yarg available in N. Carolina, though you may find someone on the Internet who is prepared to send some to you. (I'm not sure what USPS regulations are with regard to cheese 'samples').

I love blue cheese and Stilton. I only know of one local cheese-maker in my neck of the woods and they make delicious goat cheese. I need to look up Cornish Yarg.

I Lived in Wisconsin as a child, in Milwaukee and yes loved eating cheese..especially cheesecake..hahah..was bright up on feta too cause of all my Greek relatives and festivals..

I can take it or leave it frankly, but the veggie hubby loves the stuff but is not very adventurous in taste... Cheddar with everything, not that he might not like other cheeses, it's their textures that put him off, just as he hates 'slimy pasta' ... c'est la vie!

I've never thought of pasta as slimy. Some people have problems with certain textures like mushrooms. (I'm a mushroomhead too)

I love cheese and have one little triangle of Laughing Cow Swiss Cheese Lite each morning on whole grain bread (plus a piece of fruit) for breakfast.

@suziecat7 its' pretty simple French Bread butter and garlic salt on top of the bread, sliced tomatoes, then Havarti on top, bake till cheese melts. Yummy

Here in Greece the doctor told us to avoid feta because of the fat content, it looks like a piece of lard to me although I do like the taste. we buy it when we have guests who are expecting a Greek salad.

I like mild cheeses.... chedders or soft cheese... and love it in cooking..... and like you I try not to eat too much... but am not always successful.... lol's
