Cookies, Swollen Knees, And More Cookies

My brother is the manager of student housing apartments and the office staff is always having events and things going on in the clubhouse.
He brought home tons of stuff to make cookies Friday evening. It seems that they are having a cookie decorating contest today and there will be a prize given to the best decorator.
There were so many to make and I couldn't leave him to do it all by himself. I propped up my knees, alternating between the two and sat down at the table to help. I couldn't stand and do anything so I helped make the gingerbread men. It was kind of hard to roll out the dough while sitting but I was able to get it done.
As many cookies as he and I made, I'm sure there will be a lot left over. He is the kind of person who goes big or goes home whenever he does anything. I was glad that I could help him even with two injured knees.

Gingerbread !!! What are the ingredients? Is it hard to roll out?

@Marilynda1225 Yes, it really is a bit difficult but fortunately, it warms up quickly and gets a little easier

I'm not sure what all is in the mix. We had to add eggs and butter. Then after mixing, we had to let it sit in the refrigerator for a while to harden up. It was a little hard to roll out because the dough was cold but if the dough is too soft, it's almost impossible to roll out.

@simone10 I was watching a gingerbread baking contest last night and they were all having trouble with the dough. It is a difficult task to roll out that's for sure

One of the things doctors tell us when we injure our knees is to use ice packs to reduce swelling and pain. I hope you are doing something like that.

haha, your brother is really very hands on.
I bet he can fix the toilet as well as make cookies.
Good to have him in the house, and he is hardworking too.
Most guys may not want to get their hands dirty, so they ask someone else to make the cookies.

You are so right. I don't know how many times over the last 5 years that I have fallen on my knees. Fortunately after a little swelling and stiffness, I always bounce back but I am always afraid there will be that one time when I will injure myself and need to go to the doctor.

@ElizabethWallace Oh, that's not good. I guess I have been very lucky so far. Now that I am getting older, I am afraid that a fall can cause a broken hip.

That is amazing that you could roll out the cookies while sitting. I have been having problems with my foot so when I made the dreidel cookies this year, I alternated, standing to roll (I tried sitting and wasn't able to) and then sat down to cut and place the cookies on the baking pan.

I feel bad that you are still having trouble with your knees. I have chronic knee pain so I can sympathize with how hard it is to do anything. But, your willingness to help your brother is admirable and I'm sure he appreciated all your help. Love your gingerbread men
