What do you get for the guy who has everything?

It's my dad's birthday this upcoming Friday, and I am stumped as to what I am going to get him. He is turning 55, and doesn't really want or need anything it seems. I have asked him repeatedly what he wants or would like for his birthday, and he always gives me the parent answer of "Don't worry about it" or something like-wise. Of course I am going to get him a birthday gift however! I just have to figure out what.....
He's a little hard to shop for. He doesn't really have any hobbies, although the man does like his beer and brandy. I refuse to buy him alcohol for his birthday, however.
How do you decide what to get for difficult-to-buy-for people?
Is there a "go to" gift you buy when you aren't sure what to buy?

Your dad is about my age and I say the same at my birthday. As we get older we want less and less. Spending some time with him if you can on his day will be worth more than any present. That's how I feel these days.

A restaurant gift card. A photograph, theatre tickets. If he is like my husband and myself. We really don't want or need more stuff.
