What to do with--eggplants.

Looking at it, picked some and think of what will do with them.
Eggplant is a great vegetable. It is a very good source of dietary fiber, vitamin B1, and copper, and a lot more.
Aside from its benefits, it taste good too and i can cook few recipes with it.
Simplest would be, had it boiled and dipped into soy sauce with calamansi(our.local version of.lemon).
I can slice and fry them too.
Or maybe vegetable soup the we locallg call "dinengdeng" or that other region's "laswa", just have to add few more veggies like squash and morigga leaves.
And there is this ilocano.dish we are.known for, have the eggplant grilled--skin removed and mashed then sauteed it with garlis, shallots and tomatoes with eggs.
So many things to do with it.

with fried eggplant, my dip is patis (fish sauce). when torta (with scrambled egg), i get the ketchup.

really? usually the people i know who don't like eggplant are those with joint problems. what don't you like about it - the taste? the texture? the smell? just curious.

@hereandthere You just slice it and lay it in the baking dish. My husband does most of the cooking so that's all I know about it. I think he seasons it and sometimes puts breadcrumbs on it.

grill it, mash it, put some fish sauce, and mix some sliced fresh and young ginger, tomatoes, onions, and eat with bare hands.

We call them brinjals. I have planted them in the good old days and they have yielded results. Must go for them again. Any surplus you can make pickle out of them. You will find recipes on the Net.

i think pickling eggplants makes sense since they tend to absorb flavors

Harvested those eggplant from your garden or from the neighbor? Put that on top of charcoal and afterwards mix it with egg and flour and fry it in sizes like that of burger patty. That would be yummy. Or after taking them out from the charcoal, put some vinegar and some green onions and you have your eggplant salad :)

We make a whole lot of dishes with eggplants or brinjal as we call them.. If it is large, you can cut into hales , scoop out the center and stuff it with whatever you like , boiled spiced potatoes and capsicums and spread cheese on top and grill it. You can make fritters and stir fry with onions and spices and add to yogurt, it is very refreshing and cooling on a hot summers day. You can have it with steamed rice..

We like it fried or just boiled then dip in fish sauce, or cook it like an omelette.
