Anthony Bourdain once.said on his shows, "best pig ever".
Lechòn.
Or whole pig roastes over charcoal.
Originally, suckling pig is being used as the Spanish term.lechòn came from.
In some.Latin American countries, lechòn is popular.
Here, it has always been a dish that is prepared when family is complete.
We hire.someone roast it for us.
And the pig is the free range ones. Quite smaller but it is tastier. Just enough for small.gatherings.
But wait there is more, any left over from lechon can be "remake" as "lechòn paksiw".
Have you ever tasted lechòn?

@Lucky15 I don't eat lechon . . I am 99% vegan, But I still eat tinola, Of course, I eat seafoods and lots of fruits.

They don't roast it alive and it is no different than eating a pork chop it seems to me. But my daughter is a vegetarian and disagrees with me.

I was never really a big fan of Lechon, I only like the part near the ribs, because that's where all the spices are placed and that's the part that really tastes the most. Also the skin. My second fave is Lechon Manok. Anyone ever tried Liempo? That is.. urgh.. so goooood.

My husband's favorite.Lechon is uncommon in Korea
so whenever we go out or when there is a special occasion we order Lechon. He also likes "Lechon Manok" ( manok= chicken)
