Turkey sandwiches, turkey casserole, turkey soup, turkey omelettes. Go to the Butterball home page, they have some recipes for left over turkey. I just glanced at them real quick, didn't save them, but some sound good.

turkey left overs - left over turkey
Here's what I like to do with my left over turkey. I take the bones and pieces of turkey that is to small for sandwiches and put it all in the roasting pan I add about 1 1/2 qts of water. put it in some celery, carrot, onions, chicken seasoning put in the oven and let it simmer awhile until all the flavoring comes off the bottom of the pan and the carrots are mushy. Take it out of the pan strain the broth off and set it aside. Pull any meat left off the bone and discard bone and vegetables. Now I have stock for noodles or veggie soup or any thing else. some times I even freeze it
