Dinner for One

After having a ten day rest without my hubby home - not that i got any rest, tomorrow evening he will be home again and therefore I have gotten the home in order, the way he likes it and getting groceries for dinners for two.
Making dinners for one is quite strange and I must say that it took some getting used to, most of the time I just had a plate of pasta (my favourite meal) grated cheese and pesto or any other sauce. I am easy!
No meat for days, almost like a Vegetarian week I have had. Tomorrow I know that hubby will want meat, veggies, rice or potatoes and a big salad as they dont eat every well on their fishing trips.
How do you handle your meals when you are solo "Dinner for one"?
Any ideas for the next fishing trip?

Just to let you know that we will be having 25*C temperatures today and tomorrow in the mid-winter sun!

@Inlemay We rarely have a platter like this. Vin doesn't like cheese in this form. He has tried to like it but just doesn't so we usually avoid platters which is why I enjoy it so much when occasionally we get to share one with someone.

I just checked that temp on the conversion chart and I wish it was only 77F here tomorrow. We're in triple digits tomorrow. I'm staying inside.
As for cooking for one, I've been doing it for a long time, but not successfully. I still cook like I'm feeding a full family. I'm sure you did fine. Pasta is a go to meal for me too.

Dinner with a loved one is good time but there days no one is find time biz with make money like hell ,
Cook fish by steam process, clean the fish and cut small 2 inch 4 vertical strip on the fish and take a big gress paper place fish in paper add olive oil salt , pepper with lemon juise , and seal the gress paper so air must not come out , place in oven for 15 min for 145 degree ,
u husband will love it try this dish

the hubs here'll not eat what i fix these days, too spoilt to eatin' out all the time. so, i cook fer myself. i say that whilst yer hubs's 'way jest eat whate'er the heck ya wish :)

It's rare that I only have to prepare a meal for myself but usually I have something in the freezer I can take out and defrost and reheat...no fuss or muss.

Oh that looks awesome. I wish I was having that for dinner! I had a toasted cheese sandwich...not quite the same lol

My husband is the main cook in our house, so when he is not here, and it's just me, I love to make the things he doesn't like. I love pasta as the basis for a meal, or eggs. To him, pasta is boring and eggs are a breakfast dish. To me, either of those can make a most delicious and simple meal. Or I make toasted sandwiches with lots of sun-dried tomato and various cheeses.

Wow the food looks so apptizing.I also like to cook dishes for my family.Pasta with veggies and meat is a wise choice.But my brother prefers potato sandwich.And I often make some icecream on hot days.
