I think everywhere's food habit is quite different. Perhaps some areas will never think about making a dish with the fish head. However, here the fish head is even much more expensive than the fish body.
The fish head can be fried or made it as a soup. It is very delicious. Will you be interested in trying it?

Large fish heads is delicious as soup cooked with ginger and other spices, also sour soup, the cheeks and around the eyes is the choice cut.
Filipinos also grill large tuna jaws , very delicious like spare ribs and very healthy.

It has to be large fish heads that are known to be meaty, you will be surprised at the type of flesh so different from the body. Filipinos turn smaller fish heads to something crispy, you eat the whole thing, tahda! No bones

Yes sour soup with tamarinds and vegetables or " sinigang" is very common to us but might be too exotic for some of our friends.

There is demand for fish heads here. Big size fish heads are preferred.

I am waiting for the disgusted westerners to comment here. Yes I do eat fish heads.
Anglosphere people will freak out because they were so used to have boneless and skinless fish fillets from groceries.

I haven't tried the sheep brains yet. But I know in country like Morocco has a famous dish that made from sheep brain. If I travel there, perhaps I will try it anyway. I always like to try something new rather than the food I get used to everyday.

I have seen fish head prepared but have never mastered the technique of eating a fish head. My husband says I'm missing out! He's an island boy who loves his seafood. In The Bahamas, they don't believe in cutting off the fish head. All of the fish gets eaten. Including the eyes!!
