I've been here on and off today and shortly I'll be 'off' again. We are having two couples come for dinner and me, myself and I made a dessert! This is something of an achievement for me as mostly I manage to get out of most of the cooking. I often feel guilty about this but rarely guilty enough to do anything about it. However, this time I offered to make the dessert and there is now an upside-down apricot-coconut cake sitting in the fridge. Lany (@Inlemay) thought an upside-down cake was very appropriate for an Australian! Some people are so witty, don't you think?
The photo is of my masterpiece. Actually most of the apricot halves sank into the cake mixture but I had enough pieces over to place on the top. The glace then covered them anyway. I'm glad I don't have to smother it in custard to disguise its appearance but I do hope it tastes okay.

It has a nice appearance and since you have talked about the ingredients specially those apricots - my favourite - undoubtedly your guests will love it.

@silvermist I remember many years ago Pineapple Upside-Down Cake was very much the 'in' thing to make but I've never made one before. Some dishes, when they are first devised, become very popular and everyone makes them for a while.

What really matters is if it taste good. Most times making something aesthetically pleasing isn't easy or possible for a person. I understand this because it happens in my house all the time. Especially when we are trying out a new recipe.
When its a new recipe it usually takes a few times before you really nail it so we keep that in mind and remind ourselves to judge the flavor and not the appearance of it.

That looks really good. I haven't had upside down cake in years, and it was always pineapple.

Wow! This dessert just looks so fabulous You not only cook well, but also take good photo for it. You know how important that a good photo can prove it is delicious I am the opposite. Sometimes even if my dishes are delicious, but my photos can show that

That's orange rind on the top. And I'm not sure why I would want to provide shredded Romano cheese - or any other sort of cheese. (scratches head).

For this one, I put coconut, brown sugar and butter mixed on the bottom of the cake tin, then put apricot halves on that. Then I put a cake mix. When it had cooked I turned it upside down so the apricots were on top. Then it was covered with a glaze.
