What Ingredients to add into Fried Rice

Today`s lunch in Fried Rice. Just too lazy to get myself into the mood of cooking. However, I had to cook something easy and quick so that I could feed my hungry kids since it is still a school holiday.
If you have overnight white or brown rice in the fridge, this is the best idea to whip up a tasty Fried Rice with whatever ingredients you can savage in your fridge. Fried rice is a versatile dish that you can add in any type of veggies, meats and seasoning with your own creavity.
The common ingredients I added to my signature Fried Rice are :
Frozen green peas
Slices of carrots
Shrimps or chicken fillets
White rice, overnight
You can also add in:
Pork fillet
Left over chicken
Sausages or hotdogs or ham
Long greens or green beans
Shitake mushrooms
Salted fish
However, never add in leafy veggies or tofus because the Fried Rice would turn sticky as these ingredients are too fragile.

great idea! Scrambled eggs with fried rice makes the rice smell fragrance. I have not tried peanuts, maybe cashew nuts

I love fried rice because it is easy to prepare when you have left over rice and you dont feel guilty about nutrition since it is balanced. I add carrots, french beans , shrimps, cabbage, cauliflower , peas , mushrooms ...depends on what is available .and lots of chopped coriander leaves ( cilantro)

@peachpurple No I dont cook Cauliflower because it softens quickly when you stir fry it. I normally stir fry onions and all the vegetables and cauliflower cooks along with others.

Do you parboil the cauliflowers? I remember that cauliflowers are hard, just like the broccoli. French beans and cabbage are crunchy and tasty, good selection!

@peachpurple Not exactly. You just have to stir fry until all the water it leaves is evaporated. Then add the rice. The other version is adding the spinach paste and cook the rice in it.

I will cook extra white rice when I plan to have fried rice the next morning. I prefer to have sunny side up egg or scrambled eggs with tomatoes as side dish.

@peachpurple My mother has a habit of cooking extra rice. So, having leftover rice is common. Having egg fried rice happens every other day i guess :)

I add carrots, peas, celery, scrambled eggs, chicken pieces, corn and paneer to my fried rice.

You can also add scrambled eggs to it it is really good and bean sprouts.
