Frugal Dinner - Monday Night

Today was not meatless for me, no red meat though. When I buy a pack of chicken breast I do not waste anything, I will make tenders by removing the bone but there is A LOT of meat still on that bone, usually I will freeze it for a soup or chicken and rice. But its hot and I did not want soup or rice so I made chicken salad. I like fruit in mine and Tony doesnt, after boiling and allowing to cool I pulled a bowl full of chicken from the bone. Then I divided it an made mine and then his. Put it on a bed lettuce and that was dinner. It was so good! Tony commented " I forgot you can make this at home, and its good!" What was on your dinner table tonight?

I'm also a fan of fruit! Tonight my supper was: half a handful of dulse; a few brazil nuts, almonds, sunflower seeds and pumpkin seeds; a handful of sunflower sprouts; about 10 bananas; some blue grapes; a cucumber; 2 small heads of lettuce; and 2 zucchinis.

I would say that is very raw vegan! I have all that in the house too except sunflower sprouts and dulse. What is dulse?

I had thawed some steaks. I cooked those quickly cause we eat them rare. I only ate half of mine, hubby will take it in his lunch tomorrow. I had a crusty herbed bread and we also had yellow squash sauteed in a little butter.

Rare? Like bleeding rare? Oh I cannot do that with any meat. I hated cooking them when I was a cook at Waffle house.

Chicken salads are always a great option for a hot day. We like to do that or burritos and pulled chicken when we have extra chicken. We had some chili dogs tonight. Quick and easy dinner.

@andriaperry I never had sauerkraut, so I have no idea my reaction to it haha we just use chili and sour cream and sometimes shredded cheese.
