Meatloaf (it's what's for dinner)

The one thing on my agenda for this quiet weekend alone was not cooking. I was just going to wing it and have something leftover that was easy to reheat or just open a can of soup or something easy. So, after my little nap this afternoon I decided I was going to make a meatloaf for dinner. So much for not cooking I just put it in the oven along with a baked potato and I'm really looking forward to it. I haven't made a meatloaf all summer so this is a special treat for me. Tonight I'm going to watch the movie Sully about the plane that landed in the Hudson River in NYC. I remember when this happened so I'm curious to see if they give the movie justice. So far my day is flying by

My husband and son wanted tamales so I sent them to the local Mexican store and we all had tamales, and they were delicious and I didn't have to cook.

I love nights when I don't have to cook. I've never had a tamale but I do like tacos, burritos and empanadas.

I like to make a huge meat loaf and freeze servings for those times it sounds good but I don't want to cook.

Meatloaf freezes well and I like to do the same thing. I always make a huge one and save some for sandwiches too and the rest goes in the freezer

I'm sure you can find some online with ground beef, turkey or chicken. It's real easy to make too.

I made turkey meat loaf. For something different I baked it in a muffin tin! They looked cute but were not easy to get out! Did you like the movie?

@Marilynda1225 I thought about spraying the pan but is is non stick so figured it would be ok. Yes, Hanks did a great job!

My friend makes her meatloaf out of turkey too and puts them in a muffin tin. Did you spray your tin first or grease it a little before you cooked it? I did like the movie and thought Tom Hanks was perfect for the part
