winner, winner, chicken dinner!

We've been having a lot of ground beef dishes lately due to my finding a phenomenal deal, but I wanted something different tonight. I still had one package of chicken breasts in the freezer, so I thawed it in the microwave.
A week or so ago, I found a chicken "breading" recipe that called for mixing mayonnaise and grated parmesan together. I made up a variation of that tonight, added some lemon garlic pepper, and just stuck it in the oven. I hope it works!

Tartare sauce has a mayonnaise base, so I could see that working well.

No, the parmesan was what I used instead of breadcrumbs, the mayonnaise just helped to adhere it to the chicken.

It's definitely worth a try! I think it would be good with any cut of skinless chicken.

@spiderdust I like to get fish, they tell us to eat more of it it is good for us and all that. But when I go to the store and see the prices it just kills my budget for the month if I get it.

Unfortunately there aren't many cheap proteins in the grocery stores this week (being so close to Valentine's Day, the loss leaders are things like steak and lobster... way out of my budget!), so we're still going to be eating a lot of ground beef. I'd like to find something else to rotate in so we don't all get sick of it.

@mom210 Speaking of fish, I found a partial bag of tilapia in the freezer and am using that as one of tonight's dinner ingredients. I'll post about that later.
