I need to buy carrots

Today, I have run out of fresh vegetables to cut up for lunch. I am trying to make my lunch "colorful" to get more nutrition of different kinds. So after I am done with work, I will buy:
Carrots
Daikon (a white radish)
Some green leafy vegetable (depending on what is cheap)
I already have strawberries, cooked sweet potatoes and a purple kind of lettuce at home.
How would you make your lunch more colorful and nutritious?

I am not able to always run to the store. Here in the suburbs I usually keep frozen veggies on hand. So when I make something in my multicooker pot I always add a bag full of veggies.

Me too, I can't always go to the store. That is why I am out of fresh vegetables. I usually buy things for the week on Saturdays. I also have frozen veggies but now that the weather is getting warmer I am wanting crunchy raw vegetables.

Carrots are good for your eyes. I don't like them much either but they are cheap and easy to prepare. I like them in stew or curry better than raw.

I honestly don't like salads either! But I like some vegetables raw in chunks or slices.

Not a Big fan of uncooked Sweet Potatoes unless they are cooked. Cannot digest Lettuce, so I usually do Raw spinach instead. But the rest sounds good.

I buy fruits and vegetables at work to eat as we don't eat them enough at home to stay fresh. I know i need to start consuming more though instead of the junk food. I do have some daily though just not with every meal.

We're not allowed peanut butter because several students have allergies, so we are a "nut-free" school. I have to eat my peanut butter at home. I use it for dessert sometimes.
