What "recipes" you use to use up "leftover" food?

A few mornings ago, I decided to make eggs with onion and Swiss cheese scrambled in with them. It's one of my default breakfasts when I actually have enough time to cook. I then scanned my fridge for other stuff I could put in there, just to get it into my tummy and not waste it. What I found was half a can of corn, the other half of which had been used in one of my afternoon salads for a warm day. I made what might be called a "corn omelette," (with cheese and onion) and it was really good. Do you have "recipes" that can "gobble up" leftovers and turn them into something tasty?

Yeppers, yo can put a lot of dfferent things in eggs. Ice cream doesn't work so well, though.

You are right @Shavkat. I think eggs can be added to so many different leftovers. I have to remember that for the next time I have leftovers.

Yes, I "invent" recipes to use the leftover. I had corn and some chopped jalapeños in the refrigerator. I added some flour, one egg, water, baking soda and I prepared fritters.

@TheHorse I only use corn when I make Mexican food, at most I recycle into a mixed salad.

@rebelann That is what we do to. Just reheat the leftovers. We usually make enough for 2 nights. Cuts down on cooking.

Yes sometimes when chappaties are left in our house we crumble them and then cook them again into a tasty meal called poha by using oil onions and some chillies ,

I know that one...little bit of oil, seasoning, onions fried, add the chillies, chapati pieces, and top it with some lime juice and coriander...tastes yummy...I use even Andhra Mango pickle...juice..that goes well too for me...dad does not like it...

Eggs any way with leftovers is a good fall back. I also like to make soups. A good solution is to microwave a potato and top it with whatever you find.

Omelettes are a good way to use up small pieces of meat and veggies. I made a pasta salad today, and that is another good thing..I have some leftover asparagus, pepperroni, cheese, black olives..it tastes very good in there..and extends the salad..I may put in a bit of turkey tomorrow.

Its soo easy to add left overs into omelettes! Its also a sure way to actually get rid of left overs instead of having them sit and be forgotten. I love making taco ones with left over taco mean, beans, tomatoes, peppers, and cheese! The best though are cutting up a grilled hamburger and adding it with cheese and mushrooms! btw, I didn't think it was safe to leave open veggies in cans in the fridge. suppose to move them to a bowl?

Like you I'D put it in a scramble eggs or make a soup and throw in leftovers so it becomes something new. I also make a marana sauce putting some veggies I've left and add my pasta, mmm with homemade cheese bread.

Mashed Potatoes - use a hamburger mold after adding some cheddar or American cheese, fry the pucks in some oil or butter and viola - instant hash brown patties. Steak or Pork - cut it up into uniform sized pieces and add to steamed vegetables for a really quick and tasty stir fry. To season, use a low sodium soy sauce or teriyaki sauce. Fruit that's a little over-ripe - You can mash it with a fork and use a plastic ice tray to freeze it. Label the bags (seriously) and use them when you are making cocktails or want to add s fruity twist to a marinade

Forgot to add Pot Pies! As long as you have some dough in the freezer you and use whatever you have for filling then use low sodium gravy or left over gravy and either freeze or bake them then freeze them for something to snack on or serve with a salad

I used to throw everything into a soup or casserole or chili, but lately those little bits of leftovers have been going into haystacks at dinnertime.
