Recently I was taught by a friend to make homemade mayonnaise and to tell you honestly it was the best mayo I've tasted ever. It's quite simple to make, all you need are a couple of egg yolks, a half liter of cooking oil, some lemon juice and a pinch of white pepper, salt and sugar. Just mix the all the ingredients and in a mixer for about 4 minutes until it turns white with the consistency of mayonnaise, adjust the taste and you're all set .

What did you do with the egg white? Did you just discard it?

i asked the same thing and ladyduck gave a good answer: "I add the white, little my little, the mayonnaise is lighter and the eggs are not wasted."
