Do you like to eat Eggplant?

I think Eggplant is a great versatile food. It is a meat substitute. Last week, I was out of ground beef and chicken. I had an eggplant in the fridge. I also had other vegetables like onions and mushrooms on hand and pasta noodles and tomato sauce. I was able to make an eggplant spaghetti that turned out very tasty with the different spices I used. It is a good vegetable for Vegetarians. When I was young, my Mom would slice eggplant into then slices and dip them in a flour mixture and fry them. I always liked that and have made that myself. Also, there is a Greek Recipe called Moussaka. It has ground beef and eggplant. It is a very good dish. How do you feel about this versatile vegetable?

Eggplants can be good, it just depends on the way it is fixed... My daughter never would eat eggplant or mushrooms until I sliced them thin, dredged them in flour and spices and fried them in butter. Now she makes all kinds of things using eggplant. (She still won't eat mushrooms unless I slice them and fry them in butter, though.)

@LeaPea2417 Yes, we both love them. I can't fix them very often though. The butter needed to fry them make them too fattening!

I like eggplant if it mixes with egg and we call it - Torta Talong or eggplant omelet.

@LeaPea2417 First, we need to grill the eggplant, after that peel the skin of the eggplant and soak it to the egg with salt already then fry.

Yes, I do. We grow eggplants in our backyard. I like them roasted or grilled.

Oh yes, I forgot to mention Eggplant Parmesan. I like that a lot and have gotten it in restaurants and made it at home with a recipe that I have.

I love egg plant. whether its deep fried, baked, grilled, or just curry. Its awesome. It can also eaten smoked. It have plenty of nutrients too and its easy to cut and cook too. I take egg plants once a week .

@LeaPea2417 Yes Give a try. A simple homemade reciepe would be slicing eggplant in middle, dont cut it in two halves, just a sice to open and fill up the inside with some spices and ingredients. As I am from Asia, I love spices and all. make sure to put one or two drops of olive oil too, smoke the egg plant to medium , then off you go.. Damn, m hungry now,

We have lots of eggplants often as curry. It also goes well with other vegetables. The simplest and one of the tastiest eggplant dish is 'roasted and smashed'. Add chilly and salt to your taste.

I don't like it much but do like moussaka. Over here we don't call it eggplant we call it aubergine. There are probably lots of variations of the recipe but in greece they use minced lamb rather than beef.

My mother did similar dishes like yours. We had eggplants cook with this and that, in all sort of dishes. As a child, I didn't like eggplant dishes one bit, except for the fried one.

I need to find other ways to use it. Mostly I only ever think of eggplant parmigiana when I think of eggplant, and that's generally the only way I ever cook it. But I do like it quite a lot.
