Time to get that venison ground up....it must be autumn!

There are several things I love about autumn. Today, the sky is such a beautiful shade of bright blue with just a few little puffs of clouds and the temperature is so crisp and cool.
Autumn also brings hunting season. My husband more often than not sits in his deer stand/condo to just watch the deer and occasionally other wild life. But we like to use venison to make ground burger mixed with some beef fat.
My husband's getting a new grinder ready to use on the two deer he shot this week. We freeze it in quart bags which is just the right amount for us when I make spaghetti, soups, chili, and meat loaf.
I'm not especially fond of bear meat, but my husband cooked a roast last year that was pretty good. He saw two large black bears in our back field by the pond in a photo that his trail camera took recently. We see their tracks back there and it may have been one of those bear that clawed up the rail on his deer stand and broke out the glass window.
Venison, when it's prepared right, is so much more flavorful than beef, I think. Do any of you cook with deer/venison?

I am going to have Venison tomorrow. I am planning to eat it while watching a movie. I am considering to watch Bambi while eating it. I do know though most Venisons are not Bambi's mom because does are illegal to hunt. Only bucks are legal to hunt.

Yeah, I cried watching Bambi when I was little. Here in the southern part of the US, we can hunt bucks and does.

@1creekgirl Oh so on your area it is legal to kill a doe? Maybe your place have an abundant population. Most areas with hunting I know only kills bucks. So does the doe meat tasted different from a buck?

@CaptAlbertWhisker It doesn't taste different, you just wouldn't want to shoot an old doe or buck because the meat wouldn't be as tender. Yes, we have an overabundance of deer. They eat just about everything in our yard!

Venison is lovely when you can get it. I had it ages ago. Never had bear though. Is it greasy?

I don't remember it being too greasy, I only ate a few bites of it, LOL. But I did cook some spaghetti sauce for our dinner today with a pack of the venison burger.

@1creekgirl we love it so much there isnt much left to freeze. Biltong is almost like beef jerky but according to anyone that has tasted both - MUCH BETTER (salted preserved venison)

I've never tried venison but would like to... They do have 100 days of deer hunting season in NJ. Now I just need to make friends with a hunter

Some hunters enjoy the sport, but would love to have someone to give the meat to. When we have all we want, my husband has a friend that he gives it to. My husband never kills something that someone won't eat. Ask around, you might find a hunter that would share with you!
