Tomorrow's baking project: homemade English muffins

It looks like Bravetart is going to be Chowhound's baking cookbook for the 1st quarter of the year and I'm very excited about that. I'm planning to jump right in with a batch of Stella's homemade English muffins. They take 2 days to make but apparently very little active effort. You mix up the dough and let it rise for several hours, then portion it out into the muffin sizes and let them rise in the fridge overnight, then you griddle them in the morning to "bake" them. I've always loved English muffins (toasted dark!) so I'm looking forward to trying this recipe out. For those who love to bake, Bravetart is a book definitely worth checking out. Stella Parks is a pastry wizard and it has classic cookies, pies, brownies, cakes, as well as homemade versions of things like Twinkies, Oreos, Ring Dings, Pecan Sandies, and Girl Scout cookies. There are also recipes for doughnuts, baked goods like the English muffins, and even ice cream recipes. There are many variations listed for each recipe too. Parks won a James Beard Award for the book which is the culinary version of an Oscar. Stay tuned for my English muffin-making adventures!
When it comes to English muffins, you don't need any fancy equipment at all. No muffin rings, no rolling pin, nor even a mixer. Just a good night's sleep and a griddle to cook up this light and spongy dough.

Good luck and hope it works out for you. I love English muffins but never tried making them myself. I do like baking bread though.
