We grew up eating muffins that mother prepared. Her's were simple - just boiled rice ground to a paste to which she added a good amount of coconut, jaggery and salt to taste. They were broiled in banana leaves.
What I do now is a bit different. I add green chillies, chopped onion, jeera (cummin seeds) sugar, salt and coconut to the boiled rice paste I too broil them in banana leaves.
Broiling in banana leaves give them a nice flavour.

@allknowing I never had food cooked in banana leaves, not that I can remember.

@Fleura I know what you are referring to. But we call this muffin. It could be the English muffin After all The British left behind a lot of their culture back here in India (lol)

@allknowing The name is already confusing because there are the American style muffins which are like small (well actually rather big, but individual) cakes, all puffed over at the top, often with chocolate or blueberries, and then there are English muffins which are more like a sort of round, flattish bread roll. From the picture yours look more like the English sort, but made with different ingredients.
