For those who don't know, Carnival is a festive time before the Lent.
Carnival usually involves public celebrations, parades, street parties and other forms of entertainment.
People wear colorful costumes and masks and indulge in consumption of meat, and foods that will be no more allowed during Lent.
Most Swiss villages organize parties in front of the Town House, where local food is prepared and sold to the locals and tourists.
Among the most famous Carnival parades there is the one in Rio, Brazil, the Mardi Gras in New Orleans and the Carnival of Venice in Italy.
We use to make fried pastries to serve during Carnival season
Is Carnival celebrated where you live?
The photo are of past carnivals and the fried cheese balls that I made last Saturday.

I am not aware of any carnivals celebrated at this time of the year in my area or the rest of Canada. Maybe because it is still too cold to be wearing anything else but winter clothes.

@1hopefulman They wear warm clothes under the costumes, because Carnival is always in winter, because the Lent is before Easter.

There is one in Goa I so wanted to attend but never have
Goa Carnival 2018 begins with display of colourful floats. The much awaited annual Goa Carnival has begun andthis year turned out to be a damp squib as tableaus devoid of novelty floatedthrough the spacious Miramar-Caranzalem Road for the first time. King

We are a predominantly Catholic nation but for some reason we never caught up with carnival season but there are lots of festivities during lent itself but none of the merry making, a lot of fiestas are celebrated on the month of May honoring saints and martyrs. So fried cheese balls is traditional food for the season?

I don't celebrate Lent, but do know about it. New Orleans celebrates it big time here in the US. I have the beads to prove it! . I've been to Rio de Janeiro and Venice, but missed the carnival celebrations. My husband bought me a mask in Venice which I've never worn. Perhaps I should wear it in the sun to keep from getting a sunburn.
Your cheeseballs look delicious!

I have never been to Mardi Gras but I want to. This wouldn't be something I celebrated, atleast not like all the others. I don't take part in Lent, and actually, I wasn't aware that was the reason for the carnivals.

@LadyDuck I've had the fried pastry type things at the fair. The funnel cakes are delicious. It's a nice treat every once in awhile. I don't know if they have the "blooming onion" at carnivals, but those are good to. It's a very large onion that they've cut, breaded and fried.

@LadyDuck I lived in New Orleans for a short while when I was a child. The last time I was there was July 2005 to celebrate my wedding anniversary.

We have a celebration called Fastelavn, directly translated the word means the night before the fast. When the Danes became protestants Fastelavn lost the original meaning. People no longer gave up meat, and Fastelavn became a celebration for children. They dress up in costumes and play different kinds games.

@LadyDuck I loved this celebration when I was a child and I had many nice costumes, my mother made some of them herself. I think that she has the photos. One of my favorite costumes looked like a Christmas tree.

@Porcospino I remember that had a gypsy costume and a sort of Snow Queen costume. That tale was popular when I was a kid, a lot before Disney made the cartoon.
