What's going on the dinner table tonight? I want to know!
I'm making eggplant rollatini. I haven't had it in a long time and Misfits Market sent me 2 smaller eggplants. I'll have plenty for myself and some leftover to freeze for future meals. I'll probably have some leftover roasted broccoli too. It will be a meatless meal.
That's what is happening here. What are YOU having? Do tell!

I bought a potato gnocchi from Trader Joe's a few weeks ago. I am going to make that. I'm not sure what else, if anything, I'll make.

@NJChicaa These are white potatoes, I think? I didn't see the sweet potato gnocchi when I went to TJ's. I haven't been in a few weeks but want to make a trip soon.

What is the diff between eggplant rollatini and eggplant parm? I had that tomato pie for dinner..It was pretty good very tomatoey..I would make it again.

@NJChicaa Thanks, it kind of sounds like the rolled lasagna type thing Olive Garden was promoting, although I realize your's didn't have any noodles associated with it.

I had a turkey sandwich for dinner. We have been trying to clear out the refrigerator since we will be leaving tomorrow. So early packing tonight and heading home tomorrow. Our time here on the Gulf Coast ends tomorrow and we were just feeling right at home here. Sad to leave but I do miss the hubby.
