First attempt at Beet soup!

How is everyone doing this morning? It is Wednesday, near ten o’clock and I am working on getting a few steps in before I have to get ready to go to work this afternoon. Only 29 hours of work this week since I took Saturday off. I made beet soup last night. It is puréed and topped with a swirl of sour cream and some fresh dill. The broth part is vegetable broth, 6 beers, 3 potatoes, and 2 onions, heated up until they are soft. Then cooled, everything puréed together and reheated! That all takes time but easy enough recipe. I enjoyed the taste- I was worried it would be overpoweringly “beet”y but the potato flavor balanced it out. I would definitely do this one again. Have you ever made beet soup?

Hahaha. If you don't like beets, I would say stay far away. But isn't that such a pretty color?!

It is a very pretty hot pink! I hate to say it, but that's part of the reason I wanted to make it.

Haha then stay far away. The potatoes take away from SOME of the beet flavor, but definitely NOT all of it

I love beets. I would probably never make it but I would give it a try. It sounds good.

Haha. I like making these pureed soups. They are interesting! Although time-consuming.

Try to put the beet in the oven with only one cut (raw zone), face down, it's so good !!!

No, I haven't made any beet soup. I like beets just boiled and usually from the can. I know the beet vegetable is better fresh so you can drink the water after you cleaned and boiled the beet. Have you ever just made boiled beets?
