Never been a huge pineapple fan. But I tried this cake a few weeks ago at my neighbor's and it was delicious. She gave me the recipe and kept saying how easy it was to fix.
So I got the ingredients at the store the other day. Not much needed actually. I made the cake today. It is a single layer cake, just the right amount. And oh my goodness is it good.
The cream cheese frosting is perfect with the bits of crushed pineapple in the yellow cake. Oh wow is it good. That makes twice I said how good it is. I will only have one slice a day. Enough sugar for me. And it will be great with coffee in the morning.
Ever had this type of cake before? I keep saying it is kind of healthy since it has pineapple. Right!

I don't think I've ever had a pineapple cream cheese pecan cake before, but it sure sounds like it would be heavenly! I've had pineapple cake before, but not sure if the icing was cream cheese or not. Can't quite remember, but I do know it was good.

@CarolDM I'll have to take your word for it. Maybe I can try it one of these days and concur with your judgement.

That looks delicious. I like pineapple upside down cake a lot so I'd probably like this.

@CarolDM The cream cheese does sound like it would go well with the pineapple. I would have to cut the sugar or substitute the sugar if I was to try this cake.

@CarolDM I will take the pineapple. I would have to have a low sugar version though.

I've only used cream cheese as an ingredient for cheese cake. A frosting is a good idea and with pineapple and pecans you have a variety of delicious tasting treats too!
