Dinner will be Awesome Tonight!

My brother made a chili with his favorite goodies in it. He made way too much, so shared it with us. My husband felt like a lunatic walking to my brother’s condo with an empty pot, but is home with it now filled to the brim. It’s simmering away on my stove top right now. I will serve it over mashed potatoes, and top it with chopped sweet onion, shredded cheddar cheese, and sour cream. It’s spicy and just hot enough for our tastes. It doesn’t matter how hot or how cold the weather is to enjoy my brother’s awesome chili! I was going to prepare what we had at a French restaurant as shown in my photo. But now I’m not!

That sounds delicious! I'm not sure what we are having tonight. I'm running around like a chicken trying to get things back in order after having "fun" day yesterday. Taking a day off puts a big bump in the following day!

I haven't had it in years and years, but can't wait to dig in. My sis-in-law texted me that I should taste it and let my brother know what I thought of it. He really is a fabulous cook and outdid himself with this chili.

@CarolDM All the men in my family are great cooks for some reason. My DIL is a fabulous baker. I'm a darn good cook, too, if I feel like cooking.

Felicia, I can't even remember the last time I made chili. But I do enjoy it, and it is comforting, no matter when it's eaten. It's 80 degrees outside here.

I have your recipe jotted down! Thank you! I usually make Cincinnati Chili. AKA: chili on a bed of spaghetti. Maybe I could combine the two recipes. However, the recipes combined might be a zillion calories! Anyway, thanks again!

I was thinking of serving the chili with out any base, then considered noodles. Potatoes must be used up before they go bad, so potatoes it is. Waste not, want not - whatever that means.

@DianneN Ha, oh well. I am supposed to be weighing in on Wednesday, but I will be surpised if I lose any due to the fried chicken and the (low cal) lasagna..Oh and I made 2 point bagels, and thought it made 4 when it was supposed to be 8..Naturally I ate the larger bagel...

That was a great meal, but I know I can reproduce it. The chili was delicious, but I’m sick from overeating as usual. I’m afraid to get on the scale tomorrow. The only exercise I has was stirring the pot of chili.

Now you got me thinking about fixing some chili as the temps in this part of the state is quite chilly with the high for tomorrow going to e 49 (which is brrr for me). Just going to have to brae the chilly temps to walk across the road for a couple cans of diced tomatoes (already have the paste and veggies) and beans.

I'm more interested in what is in the picture. Maybe a steak with a jus and asparagus , fried egg or a bit messy poached egg, then a sort of a bruschetta with a herby top and then I'm lost I'd eat it whatever it is but would love to know what it actually is

@Mike197602 The potato bottom was cut off so it stood up. Sour cream, butter, chives, etc. were provided for the baked potato. The bread was there for decoration. I didn't even taste it, because we had hard crusty rolls earlier and a lobster appetizer. Hope this helps you!

You guessed most of it correctly. It's a baked potato standing upright with its guts squeezed up and out. lol That's a baked onion. All rather simple, but beautiful and delicious.

@DianneN I did think potato but I was going to go for mashed and formed...never would have guessed baked and squeezed and wouldn't have got the onion. I get that combo but the bread I personally wouldn't have added...protein and carbs are mixed well but the bread is a carb too far in my opinion. I'm no food critic just currently doing research as I'm trying to move to a starred kitchen and that's a big deal for me so I'm looking at everything food related everywhere!!!!

The weather or temperatures never affect what we eat. My husband has grilled on our deck in Connecticut during snowstorms. lol. We had hot homemade chicken soup last week. You wouldn't like my brother's chili. It has lots of hot peppers in it. I used to freeze lots of food in containers and baggies. I still have several meatball meals and bowls of chicken soup in the freezer. It's the smart thing to do when you spend so much time cooking.
