I just invented a new salad! Should I call it Coronasalad? What did you have for lunch today?

The shelves in the grocery stores near my house are not empty, but they're pretty close. Folks are generally friendly here right now, and I don't sense panic when I go out. At the store (Safeway) I was able to score some canned beats, hearts of palm, and other random (canned) vegetables, along with a bottle of Scotch (a Horse staple). Even though I usually make salads for lunch in the Summer, I decided to invent a new salad based on what I had on hand. I combined hearts of palm, kidney beans, beets (non-pickled) with some fresh cucumber that the folks at work had passed on to us when we shut down the school. The above was smothered in Marie's Blue Cheese Dressing. The result was quite delicious. I could have added tuna, but chose not to. OK, maybe Coronasalad would not be the best name. Horse Salad might appeal to the French, but not Americans. Any suggestions? Have your eating habits changed due to the recent scare? And of course, what did you have for lunch today?

Coronasalad is a perfect name. As vegetarians we are finding that a lot of the stuff we eat is still freely available. Nobody is stockpiling fruit and veg so as long as we're allowed out of the house we'll be fine as we always have rice, lentils and pasta in the cupboards. Today for lunch we had the food we'd bought for the train journey on our now cancelled trip to London to visit our son. So it was falafel and humous wraps with sweet chilli sauce and some vegetable sushi.

Heh. Among the things I scored the other day at Trader Joe's was humous (spelled hummus here). I can dip either cucumber or bread into it and be satisfied for awhile.

This reminds me that I miss potato salad. The only vegetable salad that we make at home is the cucumber dipped in vinegar.

I like that. I get it at Thai restaurants. It, along with peanut sauce, is the dip for Satay (meat on a skewer).

@TheHorse I usually buy dark chocolate but a friend brought me a big box of milk chocolate covered toffees and creams that I would never consider buying for myself, but because they're there, I'm eating them. One just doesn't satisfy, so I have another and another...

@TheHorse They still eat horse meat as well as Swiss do, I think that many EU countries sell horse meat. I never tired and I do not want to eat horse meat.

What I've changed the most is being more aware of how many paper towels I used to waste. No more. I might need them when the toilet paper runs out. Your lunch sounds "interesting." I knew that had to be Marie's dressing.

Heh. When I was in the restaurant business (meaning that I worked as a dishwasher at Many Glacier Hotel in Montana for three months when I was 19), we made our own blue cheese dressing. It was fun. Marie's comes the closet of any I've tried to what we used to make from scratch.

Everything was kind of okay until the blue cheese, I never had hearts of palm before but I am sure it isn't that bad, blue cheese is gross haha My lunch was cereal but I woke up late, but normally my lunch is really my breakfast.

Blue cheese is my favorite salad dressing (I also enjoy a good Caesar salad). But one could add whatever dressing they prefer. I may have some cereal for breakfast today. I have too much milk here.

I had Tuscan Bean Soup for lunch. Our eating habits may have to change because they are out of everything; but for now we are stocked up. My husband is out trying to pick up a few things that we need. Good luck with that because the stores are picked clean. I like Coronasalad the best.
