Baking our own bread

Due to massive panic-buying, many of our local groceries have run out of daily staple like bread. My family isn’t a huge consumer of bread, but we make sure to have ample stock good for a week. Since bread supply has begun to dwindle, I now have to supplement our need by baking our own bread. I don’t usually make the simple white bread. Instead I go for the alternative kind of bread that may be dairy-free, egg-free or gluten-free. Last time I baked dairy-free and sugar-free bread muffins. I long to make gluten-free breads again but the grocery where I get coconut flour is in the city boundary and I can’t go there because our city is on strict quarantine. I asked my husband to get me huge bags of all-purpose flour, and he came home with small boxes of APF. Apparently people have hoarded flour as well. Oh dear. I plan to go the grocery by myself next week and hunt for alternative flour. I may have spotted coconut flour and cake flour a few months ago. Here’s hoping that people don’t bother to get the kind of flour that I’d like to use. In the meantime, I’ll make do with the supplies that I have. Hi there Connie! Wow! That's great! Well, I don't know how to bake a bread. I have attended basic and advance baking lessons but was not able to practice at home since we do not have an oven. I am afraid what I learned from there was just wasted. Anyway, I would love to buy bread from the bakeshop or even the grocer's but only my husband can go outside our house since only one member of the household is given a quarantine pass. It's great that you can bake your own bread though. Enjoy!

I'm sure you still have those skills and knowledge in you, and they're just waiting to be used. I hope you could get even just a small oven and bake again. The one that we got last December is but a small electric oven that cost us about Php 3,000 ++ I so want to attend baking workshops and lessons but there's none that I know within our village. I just watch a few videos and rely on the baking books that I've bought from Booksale.

@almostoveryou Its not hard to bake yeast bread. You just don't want to overheat the yeast. The warm water put into the yeast and sugar mixture should be warm but not too hot- if the water is pleasantly warm on your wrist, it will be fine for the yeast to grow in.

I love gluten-free bread as well. It's not yet very popular here in my country. I just make it for my husband and daughter who are prone to skin allergies.

I want to try baking my own bread too. I baked muffins, cupcakes, cakes and brownies but not yet bread. So it will be nice to bake bread. I was able to cross to our city to another city last Tuesday to do grocery. Are you in NCR too?

@almostoveryou yes, that is true. muffin/cupcake batter can be use in bread or loaf pan but they will just differ in the time of baking. But I want to learn the commercial loaf bread, I think they use yeast and I have not use yeast yet in baking

@rakski I believe muffins and brownies have the same base recipe for breads. They just differ in baking time, I think. I've made banana bread loaf which I baked for about 40 minutes and used the same base recipe for banana muffins which I baked for 20 minutes. No, I don't live in NCR.

@Janet357 I make quick breads and I'd usually need just flour, sweeteners, and some binder like eggs. Though lately I've been making breads without the eggs. I also seldom use commercially processed sugar, as I prefer to use naturally sweet ingredients like dried fruits, honey and sweet potato. There's a lot of recipes out there. Most breads would require yeast but there are some that don't. My friend makes flat bread without yeast.

Lucky you've got bakeries there. The artisan bakeries that I like have closed temporarily. Deliveries are available but I don't want to shell out money while on quarantine. I'm actually dreaming of having a Bread Maker, for when I'm too lazy to whisk, mix, fold and bake. It's still a bit costly in the market. If you have a microwave, you can make keto bread. I don't know how but my friends on keto diet have made them and apparently they're so good.

@yoalldudes yes, it's also called a bread machine. it does all the work for you - kneading, mixing, folding. it really is a good investment. so many vidoes on youtube about this breadmaker.

That is nice making your own bread. We buy gardenia loaf bread and it quickly get out of stock. Many our panic buying bread too

I have made bread for years. What do you mean by sugar free bread? The yeast needs a bit of sugar to feed on in order for it to help the bread to rise.

@almostoveryou Honey and molasses are sugar. I have made quick breads like you talk about using mashed up dates for sweetening. I have been baking for about fifty years so I know what you mean. These breads are a dessert to me.

I don't use yeast when I bake bread. I use honey, raisins, bananas and other natural and healthier sources of sugar. Sugar-free breads are not new. If you search the Internet, you will find lots of bread recipes that do not use sugar at all.

@sallypup I'm referring to anything processed sugar be it white, raw or washed sugar. It's nice that you've been baking for fifty years already. We could learn some tricks from you.

Yes, we bake our own bread. Mostly with rye or wholewheat flour.
