What did you have for lunch today?

I've been on an eggs and bacon kick recently. I'm not sure why. Maybe it's because the Coronavius has made me want to seek out comfort foods--things that are "safe." Anyway, I had three strips of bacan (salty and delightful), one egg (over easy), and a toasted slice of sourdough toast with butter. It was delicious. Have you been going with the "familiar" at least once a day during these difficult times? I'll probably have bacon and eggs as least once tomorrow.

@TheHorse No you cannot because the potatoes are mashed and miked to the salmon, than the patties are coated with bread crumbs and cooked in oil. Latkes are another thing, those are sort of pancakes almost identical to the Swiss Rösti.

Bacon and eggs are my daughter's food. I'm going to have some steamed vegetables and beef with sauce at noon.

@TheHorse We cook the raw beef for a few hours with a variety of seasonings, such as salt, soy sauce, cinnamon, cloves, and peppercorns, and so on, and then we slice it up and eat it. We can make a sauce with the mashed garlic ,vinegar and sesame oil.

I had a chicken and tomato sandwich (chicken salad with a slice of tomato) and some snap peas. I had my eggs at breakfast, and I'm saving the bacon for the weekend.

@TheHorse I did. I had a cup of meat leftover from a chicken I roasted a couple of nights ago. Not quite enough for another meal, but enough for a few servings of chicken salad.

We mostly go with vegetables and fish. There is a news, may be rumour, here that there is bird flu going on so no chicken or eggs.

Get some boneless chicken, marinate it with honey and oyster sauce. Then you would BBQ it in your oven, toaster or airfryer.

How did you make it? That's something I shuld learn to make. Chicken soup is a comfort food for me, but I usually buy it canned or prepackaged (or get Thai chicken soup--Tom Kha Gai).

@just4him Tuna salad sounds good right now, probably because I haven't had in in awhile. Actually, I have tuna, blue cheese dressing, and some other goodies here. I could make a "creative" tuna salad if I wanted to. But I think I'm going to go for a steak sandwich.

For some reason those rolls never do it for me. Maybe I get confused about whether I'm eating a sandwich, a burrito, or an alien invader. Maybe if I had blue cheese dressing to dip them in...

I haven't had lunch yet today. Come to think of it, I haven't had breakfast yet today (I must rectify that). Yesterday, it was leftover meatloaf, cold. The day before, it was leftover meatloaf, reheated. I think it was tastier cold.

@TheHorse I can be quite clever at things like that. Around here there was a time when one baked chicken would be baked chicken the first night, chicken pot pie the second, chicken a la king, the third and soup the fourth. My parents spent their teenage years in Nazi-occupied Holland. Stretch limited food resources was an art.

We had our first take-out meal since this lockdown started. We had pizza for lunch. I had a veggie pizza with black olives, mushrooms, spinach, green peppers and tomatoes. Yum!

That sounds very good. Comforting too. I've been finding that my favorite coffee, prepared just how I like it- brings a feeling of familiar comfort. It seems that I appreciate it more than usual.
