Bored again - lemon slice this time

I was a bit bored again the other morning so decided to make some lemon slice. It has store-bought lattice biscuits top and bottom. The filling is cream cheese, butter, sugar and lemon juice. I used Splenda instead of sugar but it does have icing on the top. As Vince has Type 2 diabetes, I offered to lick the icing off his pieces but he said it won’t be necessary. It freezes well but also thaws quickly so I can just take a piece out of the freezer to have with a cup of coffee. This social isolation is bringing out the baker in me.

I keep on hearing Splenda. Is it really healthier than sugar?

It's not healthier, but those who suffer of diabetes cannot have sugar, so this is an alternative.

@LadyDuck Anna is correct. Vince has Type 2 diabetes so shouldn't have too much sugar.

@LadyDuck ok. I actually read some articles.online after asking this. I use Muscavado sugar-unrefined sugar with strong molasses.

It's not too hard. The hardest part is finding a pan the right size so the biscuits fill up the tray.

Ive heard there is some fake powdered sugar that works in things like frosting, never tried it myself

@JudyEv I know some of the fake sugars have a confectioners mix. I think my fake sugar would work as is, it's pretty fluffy as a powder goes too

Splenda works will in the filling. I possibly could have used it in the icing as it's quite a fine powder.

They're in the freezer as we have sausage rolls to clean up first. Vince made the sausage rolls ages ago and they've been in the freezer till we cleaned up the mini quiche which have been in the freezer till we cleaned up the chocolate apricot slice.

I guess you could walk to a bakehouse but we'd have to drive into town so the temptation usually stops at that point. Anyway, we all need comfort food now and again.
