Baby lettuce salad for lunch

Because of limited food supplies due to the pandemic, we try our best to stretch our meals or limit the menu. The challenge is keeping those meals nutritious and filling. I'm thankful that my family rarely complains about my meal plans. They know that whatever I serve them is usually packed with essential nutrients -- even if it's nothing like a feast.
Yesterday I opted to make baby lettuce salad for lunch. I got two big bunches of these lettuce for just a little over a dollar. While some prices of veggies have skyrocketed, the lettuce remains affordable. I used only one head to make this salad so that's only about 50 cents + a few ingredients already available in the pantry like onions and green olives. Drizzled some olive oil and roasted sesame dressing on these lovely greens. Hubby and kids loved it!

It depends on what I have. I love avocado pieces mixed with the lettuce. Or some fresh cheese.

Oh fresh cheese. I'd have them if they're available. We usually just have processed cheese here.

@almostoveryou Thank you so much :) We recently got some form a local cash and carry but it wasn't that good. Luckily, a friend's recommended a local farm that delivers :)

I am glad you have a family that accepts what you make because you are making it. I put carrot, celery if have, tomato, cucumber, green pepper and red pepper.
