Starting My Day With Coffee and Blackberry Coffee Cake

We all got up early today--before 5 am. My husband put on coffee and I mixed up batter for a coffee cake with fresh blackberries that I have picked in and around the yard. I first made this with apples. We had four apples left over from a bag of apples that I had gotten at the store. Everyone was tired of apples so I threw them into a recipe I had that called for dried apples. I just substituted fresh apples. I used the same recipe today but threw in the blackberries instead of apples. It turned out pretty good but the berries were a bit tart. Next time I will let the berries chill a bit with a dab of some sugar sprinkled on them. This was a recipe I found in an Amish cookbook that I purchased a few months ago from Ebay. That sounds so good. I keep meaning to make to cookies but I haven't gotten there lol. Mostly I'm working hard to start our little garden and to get some work done both online and off. While my husband is off, I could use his help with a couple things.

@kareng It is but I enjoy ours. I have the little hot house things planted but I think I'm going to plant a few things in the ground soon. I'm hoping the weather breaks soon.

It was very nice with coffee! I made a large loaf so we have plenty left for another breakfast or afternoon snack.

Yes, I am trying cookies with vegetable oil instead of butter and I have to see that they are really good.

I have been substituting an egg or an additional egg and omitting most of the oil when a recipe calls for it. It will still come out moist!

@Aquitaine24 I use sunflower oil, I am allergic to peanuts, so I cannot use peanuts oil.

The next one I bake after the blackberries are gone is going to be with dried cranberries. It is not hubby's favorite, but he will eat it. LOL.

I've been more active with working outside and cleaning up the yard. And still have Ebay going pretty good. I do have more items to add that I need to get up before the end of the month. I have more free listings so need to use them!

I would love to have some of your coffee cake! Baking is what I enjoy, but now that my husband can't have gluten, it's hard to re-do some of my recipes.

I have to watch it here too. My hubby is diabetic so I usually don't add all the sugar called for. He is a bread lover and will eat a whole loaf of bread if you don't watch him.

Cooking wise, I'm still burning everything and being the awesomely bad cook I've always been...just on a more frequent basis! haha In other areas of my life, I find myself sleeping much more now than I ever did before COVID.

Nope, I am not in lockdown. But I am cooking at home and not having the same dinner for 2 1/2 weeks has been awesome! I am using what I know from all these years.

I have tried some creative recipes lately. It seems it is the best for us to stay at home and therefore I hope to make nice food for my family. Sometimes enjoy eating will give us a good mood.

Well, I did clean some of the things much more thoroughly. And never before in my life have I officially worked from home for such a long time - 1 month plus!! So, yes some very different things. And the morning fare looks wonderful indeed !

@kareng We don´t have them as the bushes have not been planted here as they are all high rise flats so no one has a garden or such like. The jam they make of it is way overloaded with sugar and does not taste like blackberry now.

Next time I make it I will let the berries sit with sprinkled sugar on them before mixing them in. It was a tad bit tart!
