Low Carb Meals

I am trying to do low carb meals as much as possible. I'm not really going for the ketogenic diet per se, just cutting carbs and trying to do the same with sugar as well. The Maple / Mustard chicken meal I had was low carb. We made zucchini fritters and cauliflower mash potatoes with it as well. Around 20 net grams of carbohydrates in that one.
Yesterday I just did riced cauliflower in tomato sauce with sauteed zucchini. Probably around 30 net grams.
I need to peruse the interwebs for more recipe ideas, especially implementing more veggies.
Do you do low carb, or have you? Any tips / tricks for me?

This is a good one with marinara sauce:
You can do pretty much any protein (chicken, steak, pork, fish, shrimp) with green vegetables, cauliflower, carrots, mushrooms, onions, etc. Salads with grilled chicken, vegetables, olive oil/balsamic vinegar, and no croutons. Tuna salad wraps in lettuce leaves. (chicken salad too) Bunless beef or turkey burgers with sauteed mushrooms/onion on the side. Julia Turschen has a great recipe for turkey ricotta meatballs. I make those often.

Thanks! That sounds really yummy. I'm not a picky eater, but I feed picky eaters so I have to figure out something we'll all eat.

@NJChicaa Pulling up skinny taste now, thank you. They only like some veggies, and one of them prefers more meat than veg, but I'll figure it out.

@ScribbledAdNauseum Those are all pretty basic unless your picky eaters don't like vegetables. Then make corn or mashed potatoes for them. Also check Skinnytaste.com She has a ton of low-carb recipes. You can filter through everything to find the low-carb ones.

@just4him Fish is a "when I go out" sort of thing. I think I need to start implementing it into the meal rotation though.

We just aim to eat more vegetables, and cut out as much sugar and highly processed foods as possible . . . which means lowering the carby carbs (we don't follow a particular diet regiment). I am not meticulous enough with the counting and numbers . . . but if I keep in mind what is better for us to eat, then I am less stressed about it (because I just know I'm going to cave with certain things . . . I'd rather feel ok with the "moderation" thing than feel guilty about caving). Yah, I'm no help .

@ScribbledAdNauseum Who can resist a reese's ! Yep - for family we are the cook AND the nutritionist. It's good you have a team of friends doing this together . . . my friends would be useless this way - many don't cook .

@much2say Out of all my friends, I am the one that cooks the least. I would love to cook more often, but we each have two days per week to decide on a meal + one place that we always go to.

I already know that I am going to still do the one reese's cup a night regimen that I've had for the past couple of weeks. I do want to lose weight, I do want to eat healthier, but not just for myself but for the family I cook for too. Bonus is that I have friends who are doing this with me.

We did Atkins for about 10 years so we lived the low carb lifestyle. I loved sausage and peppers and ate it often.

@ScribbledAdNauseum I put pepperoni in the microwave until it gets crispy and then I use it with dip or salsa.

I love carbs so I can't offer you any tricks for a low carb meal.

I used to love carbs too. I never thought I'd get to a point where I didn't crave them,but I don't crave them now.

@Marilynda1225 Good Luck! There are so many different diets out there. One of my family members did WW for awhile and it worked okay for them. She also did the Suzanne Somers diet and that worked okay for her too, but she gained all the weight she lost back.
I've done the slimfast diet and that made me gain! This is the first proper proper diet I've been on that has worked.

@ScribbledAdNauseum that's really good. I don't know if I would be able to do low carb but I have cut back on my portion sizes. I'm trying to lose a little weight with Weight Watchers and just having little bits of things I like.

I think I may have told you in another discussion, I'm just doing this with my friends. We all share what we're eating to sort of spur ourselves on. One of the friends is freshly diagnosed diabetic.

I hope that doesn't happen to me. I am taking it slow now, but implementing as much low carb alternatives as I can. My friends and I are all doing this together so that should keep us accountable.

I don't think I'll mind it, but I know I'll have to sneak a treat every once in awhile. I love vegetables, I just don't eat enough of them.

I love riced cauliflower because it's so versatile. I have used it to bulk up a dish when I needed to.

@thelme55 I don't make it, I just buy it already that way. There are brands here that have it that way. It's just finely chopped heads of cauliflower.

I don't do low carb; but it sounds like you have the right idea meal-wise. You should follow Courtney Dutton. She does extremely low carb meals.

I've already talked to her about that. Two of my friends and I are trying to cut out carbs and eat healthier. One friend has already seen a difference.

Well maybe a few people here will have some ideas for us both then. Have you tried zero noodles? You can get them at walmart. I haven't tried them yet, but a friend said that they were really similar to regular noodles.

@MommyOfEli2013 Ah okay. I have a friend who has a texture issue too, she can be picky about some stuff. For me it's cheese that I am weird about.

@ScribbledAdNauseum That'd be great! I have tried those noodles and hated them because of the texture....but texture is a big problem for me. My husband thought they were fine and he doesn't do low carb.

I loved your article! I do low-carb and I do a lot of cooking I like zucchini as well. This morning I made low-carb pancakes you have to use almond flour and Almond milk. I do a lot of low-carb cooking so if you want to know what I make just ask thank you.

I'd be happy to hear any suggestions you have.
I am going to try to make pancakes with Carbquik one of these days. My breakfast usually consists of a shamrock farms protein meal or an atkins bar. I used to do bacon and eggs but got burnt out with those.

Hello AmberLynn.
I've been on the keto diet before and it works pretty good. But it can be difficult in the beginning. Today I'm not doing the diet per se (like you) but I am watching my carbs. I read the labels on what I'm eating and limit the carbs as much as I can. I have good and bad days in regards to limiting carbs.
I also try to watch the amount of calories because I found that if you cut the carbs but still eat a lot of calories then you don't see as much weight loss.
And don't forget drinking water. Not coffee, tea, or juice but just water. If you like you can add lemon to the water for a bit of flavor.
My only suggestion would be to incorporate exercise into your routine where you can. Try walking when you can. On sunny days instead of looking for a parking space that's close to the store/work, find one that makes you walk a bit. I'd also recommend some weight training because toning your muscles also burns energy/calories.

Thank You. I already drink mostly water with the occasional juice or herbal tea. I do need to do better about exercising / walking though. Right now I will focus on the carbs. I want to lose weight, but that's not my main goal here.

There are a lot more unhealthy options here in the US. The supermarkets here arrange the foods in such a way that you see unhealthy foods even while you shop for produce or deli items. Even at the end of the registers, there are "impulse items" for sell.
