Made (Vegan) Lemon Chia Seed Bread for first time

This is a fun vegan recipe that I found and kind of "made my own" by altering it a little bit. it's no good for you, but it was fun to make and really delicious tasting! It requires a ton of sugar and flour, but on the up side - no animal products or butter. I get random drug tests at work - still don't know if poppy seeds show UP in a drug test or not (anyone know - fact or fiction?) But just to be on the safe side, and because chia seeds are good for gut health...Why the heck not? Makes 10 Slices. 3 cups all-purpose flour 1 cup oragnic cane sugar 1 tsp salt 1 tbsp baking powder 1 3/4 cup almond milk (unsweetened, warm) 1 cup refined coconut oil, melted 2 tsp vanilla extract 4 tbsp lemon juice 1-2 tbsp lemon zest 4 tbsp poppy seeds (*OR chia seeds) Glaze: 1 cup organic powdered sugar 1-2 tbsp lemon juice 1. Preheat oven to 350 F, grease a 9x5 lightly with coconut oil and dust with flour. 2. In large bowl whisk together warm almond milk, melted coconut oil, vanilla extract, lemon juice & zest. Next add cane sugar to liquid & whisk. Then add salt, baking powder & mix. Gradually add flour, 1 cup at a time. Once batter is mixed wll & smooth - to the batter - add 4 tbsp of poppy seeds (I subbed with CHIA SEEDS) and mix well. 3. Bake 45-50 mins or until toothpick inserted comes out clean. Cool in pan for ~10 mins. 4. For the glaze, whisk together the powdered sugar & lemon juice and pour over top! I have to chill out on baking as these things are not helping my waistline, but this was certainly delicious! Are you a baker? Have you tried any fun new recipes?

That sounds tasty. I'd try to half the sugar and maybe sub in a ripe banana. I used dates for sugar when I made a pumpkin pie yesterday. Plenty sweet and no refined sugar.

That sounds like a good idea, although banana and lemon aren't two flavors I think blend well - probably using just half the sugar would suffice! I have never subbed dates for sugar. How does that work?

@sallypup This is amazing, thank you for walking me through this! I will DEFINTIELY check it out. I am a big experimenter too. I enjoy having a tasty end result, but I really like to make modifications to make things healthier. Maybe I will try it in my next batch of banana bread. I hate using artificial sweetners,too, which really aren't better for you than regular sugar (maybe even worse). Thank you!

@maezee I find that dates taste like brown sugar. When I made my pumpkin pie, I dumped 2 cups of baked pumpkin into a blender with spices and eggs per usual. I also put 11 dates in- pits taken out of course. If the dates are older and not soft, soak them in warm water for a bit. The blender grinds up the whole mess and makes a custardy slurry. I have a pie shell ready and I pour it all in and bake per usual. I experiment with dates and how much sweetener do I want or need in something?? 11 dates is good for a 9 inch pie- 6 to 8 slices, depending on how large or small the slices are. I hope this explanation helps. I tend to experiment when I bake. Its amazing to me how certain fruits like bananas or dates really give plenty of sweet taste. The stores have us all needing and craving a ton of sugar taste. My fruit pies? NO sugar or other sweetener at all. I find that the natural fruit taste is fine and so tasty.

It was! And I didn't miss the butter or eggs involved in this one. I thought maybe it wouldn't stick together, but I didn't have that problem at all.
