Not What I Wanted, But It Will Suffice

I really had it in the plans tonight, since we will not do our actual family Thanksgiving until Sunday, to make some ribyeye steaks cooked in a rosemary butter sauce with sauteed mushrooms and onions. But the stores were all closed today. So, instead, I fried up some bacon. Mainly for the grease. I seasoned up some pork steaks with Worcestershire sauce, No Salt, pepper, onion and garlic powder, and some ground ginger. We ate the bacon. I cut up two apples and a large onion. I browned the seasoned pork steaks in the bacon grease, and made a mixture of cherry 7 UP and some Ranch dressing bits from an empty container. I added in the mixture and will braise that for about an hour. We will have it with a tossed salad. It should be delicious. I guess I will just have to have the rib eyes another day. Same to you. Sometimes our plans never work out. Wound up going to the store, myself today. The family Dollar was open. As my husband likes to say, sometimes waiting makes it taste better. Enjoy the rest of your holiday.

Unfortunately what I needed wasn't in any of the stores that were open. Oh well, I can brave at least the grocery store today, and I am willing to pay more since Walmart will likely be a madhouse, and I am not going in there today for any reason whatsoever.

You don't have a neighborhood Wal-mart that just does grocery? Our superstores are no doubt packed (no surprise there), but I imagine our neighborhood Wal-mart will be a ghost town. Because we all know deals revolve around everything but food, soda and the occasional beauty product or medicine. And, yeah. Paying a little extra once in a blue moon is perfectly fine. @porwest

The grocery stores/supermarkets were closed on Thanksgiving? Whatever you had in that dish looks good. What's a pork steak look like? I only know of a pork chop. Is that a pork tenderloin?

Pork steak is a popular Midwest cut of pork cut from the shoulder, also sometimes referred to as a pork shoulder steak. But yeah, a lot of the stores close on Thanksgiving around here. It's become a thing.

@NJChicaa I have tried to cook them a hundred different ways, and they always come out a bit too dry for me for whatever reason. Even on the rare occasion I have ordered a pork chop at a restaurant, they are still rather dry and I think even bland.

I love pork in general. I always find the pork steak to be much juicier, flavorful, and scrumptious over, say, a pork chop, which is often dry for me. Pork steaks are pretty much a Midwest thing. But it is basically mostly just a cut of the pork butt roast. You could probably ask your butcher for one and he would probably know what it is. Although, here we have pork steaks AND pork butt steaks, so the actual steak is from another cut...not sure exactly what the difference is. To me the pork steak and pork butt steak are almost identical.

Wow! What a great idea for dinner. Do you thicken the mixture? I use tallow (beef fat dripping) in all my cooking. Thanks!

I usually don't. It would be more like a gravy and the wifey is not fond of gravies or heavy sauces. So I just use the braise to make the meat butter tender. Tallow is DELICIOUS. It's what McDonald's USED to cook their fries in when their fries actually tasted good.

The weird thing to me is that the only way I have been able to have a moist pork chop is to bread them. For whatever reason, it makes a difference.
